Job Description

Responsible for assisting the Executive Chef in the preparation and development of bench top samples and new items for production.

MAJOR POSITION RESPONSIBILITIES

        Assist in food product formulation from bench top to production using a continuously developing skill set in food formulation and processing equipment capability understanding.

       Assist the Executive Chef with customer presentation; developing and refining professional culinary skills for use in design and presentation.

       Prepare bench top samples as directed by the Executive Chef; evaluate ingredient and process performance of bench top samples against customer specifications and modify as needed.

       Assist with the setup, performance and evaluation of production tests on pilot plant equipment such as grinders, blenders, forming, coating, cooking, freezing and packaging.  Recommend and implement improvements.  Establish product specifications based on testing results.

       Document processes, ingredients and results related to production tests, bench top samples and product evaluations.  Provide information on product ingredients, yields, weights, throughputs, etc. for costing.

       Select and ship samples for customer evaluation.

       Maintain a clean and sanitary work environment both in the Corporate Test Kitchen and at plant production testing areas.

       Prepare reports for management as directed by the Executive Chef.

       Perform other duties as assigned.

Required Skills

EDUCATION/EXPERIENCE/SKILLS

       Bachelorís degree in Meat Science or Food Science, or an Associates degree in Culinary Arts combined with relevant industry experience.

       Three years experience with food formulation or development

       Knowledge of food preparation and presentation methods, techniques and quality standards.

       Ability to creatively apply food formulation principles to large scale production requirements

       Ability to work accurately with different units of ingredient measurements; measure, add, subtract, multiply and divide.

       Ability to communicate effectively with all levels; including production personnel, peers, management and customers.
