Direct Source Meats is a value added raw processing and cooked meats facility owned by Labatt Food Service. The Research and Development departmentsí main focus is to identify and help solve customer needs by developing new products and product applications in meat and poultry.

Main Responsibilities:
--Technical development of new product applications to support our meat business.
--Conduct customer product audits and critically evaluate organoleptic properties and performance.
--Flavor matching and new marination formulation development.
--Perform current product quality testing to ensure consistency and eliminate variance.
--Work closely with production to conduct yield tests on raw material for data collection and pricing.
--Set up sample requests and create samples for customers.
--Communicate closely with Research and Development Manager, Sales, Production, Quality Assurance, and Warehouse departments to ensure complete transparency throughout product development process.
--Set up and revise specifications.
--Test new and current products in test kitchen.

Qualifications:
--Education: Minimum Bachelor of Science Degree in Meat Science (preferred), Animal Science or Food Science required.
--Strong documentation, organization, communication and Microsoft Office skills.
--Knowledge of meat processing and equipment, preferred.
--Basic knowledge of marination technology as applied to processed meat and poultry.
--Positive attitude and capable of working in small team and individual environments.
--Capability to manage own projects, keep them moving in a timely manner and keep up with demands of Sales.
--Must be comfortable participating in sensory testing including all products.
--Willing to work in a low temperature environment for an extended period of time.
