Position Title: Flavor Scientist

Reports To: Flavor Research Manager

Purpose of Role:

Performs flavor and analysis in support of Global Chocolate Science and Technology group efforts. Collaborates with outside Universities, Research Groups, and Businesses to perform research of the highest quality.  Discovers new intellectual property under the direction of the Applied Research Manager and/or Flavor Research Manager, which can be used to drive business growth.

Principal Accountabilities

• Conduct flavor isolation and concentration procedures (e.g. liquid/liquid extractions, steam and high vacuum distillations) for raw materials and/or finished products

• Analyze raw materials and/or finished products for their aroma and taste properties using a range of instrumentation including, but not limited to, preparative and analytical chromatography, mass spectrometry and gas chromatography-olfactometry.

• Critically read and perform documented flavor isolation, characterization and synthetic procedures. 

• Designs and executes research projects independently and develops appropriate method modifications as required.

• Assures research is peer reviewed and is “publication quality” whether the business chooses to publish internally or externally.

• Collaborates with internal scientists & technicians and external laboratories and University affiliations.

• Maintains proper documentation of flavor research and writes technical reports, which enable data to be utilized by the business. 

• Develops innovative methodologies for laboratory and defines additional laboratory procedures to be conducted by technicians (analytical / standard preparation / sample preparation / shelf life protocol)

• Oversees preparation of product prototypes by technicians when necessary to support flavor research activities.

• Manages temporary labor alternatives to ensure customer needs are met in a cost-effective and timely manner

• Orders and maintains laboratory equipment and necessary supplies (e.g. instrumentation, chemicals, solvents, glassware).

• Keeps current with the literature in the field and recommends the adoption of new techniques and /or research opportunities.

• Planning horizon is typically 0-1 years as this position executes projects which have been defined.

Key Functional Skills/Knowledge

• An advanced understanding of the key scientific principles associated with food systems is critical. 

• In conjunction with a general knowledge of food science, flavor science and chemistry, in-depth knowledge of a ‘broad base’ of  analytical techniques, including Gas Chromatography, Liquid Chromatography and Mass Spectroscopy techniques.

• Knowledge and skill in the use of the following’  Computers, spreadsheet software (MS Excel preferred), data acquisition software (i.e., HP Chemstation) and Laboratory Information Management Systems (LIMS)

• Good organizational skills

• Good communication skills – verbal and written

• Good interpersonal skills with the ability to work independently or as a member of a team.


Key Experiences

• Demonstrated record of success performing research in food or related systems

• 0-5 years’ experience in a technical field within the food or related industry

Desired Education

• A BS degree in Chemistry, Biology, Food Science or a closely-related scientific field and 0-4 years of experience in the food industry in field of endeavor is required.

• An MS or PhD and 5+ years of experience is preferred.
