Description

The Associate R&D Chef supports culinary-centric product innovations, renovations and menu adaptations that a) drive incremental revenue through improved product appeal or new sales, b) deliver cost savings, and c) ensure compliance to nutritional regulations and our food values for our K-12 business. This responsibility includes executing bench-top and scale-up recipes and meals as well as maintaining the Culinary Departmentís supplies. The Associate R&D Chef will have a balance of culinary creativity with real-world conditions and an entrepreneurial mindset. This position is based in our Oakland, CA office and reports to the Culinary Development Director.

Requirements

Duties & Responsibilities

  • Support culinary team through meal design.
  • Create meals using menu strategy inputs, food trends and use of nutritional development software applications.
  • Direct involvement in meal, pantry item and recipe innovation.
  • Lead recipe and meal renovations under the direction of the Culinary Development Director.
  • Coordination of product and vendor cuttings.
  • Oversee department coordinator to maintain the Culinary Departmentís inventory and supplies from supply ordering, FIFO to work space organization.
  • Preparing mise en place for Culinary Development Director and Executive Chef.
  • Executing/testing bench-top, mid-scale and full scale scratch recipes and meal builds.
  • Accurately calculating and validating scaled recipes.
  • Preparing production documentation for nutrition review and market distribution in partnership with the departmentís coordinator.

Qualities & Qualifications

  • 5 years min working in an fresh foods R&D environment.
  • Culinary Degree required.
  • An unrelenting attention to detail.
  • Large format cooking experiences a plus.
  • Excellent knife skills, demonstrated familiarity with commercial kitchen equipment and HACCP food safety standards.
  • Intermediate to Advanced Microsoft Office Suite skills.
  • Natural drive to push projects forward, curiosity and troubleshooting instincts.
  • Excellent communication and interpersonal skills: Able to work well with others and participate as part of a team.
  • A self-starter who is able to work independently with little direction, and whoís confident enough to ask when clarification is needed.
  • Able to multitask, juggling varying deadlines and work within an environment with ever-changing priorities.
  • Able to lift 50 pounds and stand for extended periods of time.
  • Serve Safe certification is required.
  • Food Science or Science based degree a plus.
  • Project management skills a plus.

Requirements, Education and Experience

  • Culinary Arts degree required.
  • BS in Food Science, Science related degree a plus.
  • Serve Safe certification required.
  • Test design experience required.
  • Project management experience a plus.
  • Proficient in Microsoft Office Suite including Word, Excel, Powerpoint and Outlook.
