Summary: This position supports routine product design & development activities as well as the day-to-day operation & maintenance of the food applications laboratory.  

Principal Accountabilities

- Perform bench-top product development activities as to support the CocoaVia® product line and Cocoa Flavanol ingredient sciences, such as:

• Assist in sample preparation for tasting sessions and for research experiments (e.g. weighing, serving, cleaning, centrifuging, etc.)

• Optimize product formulations from a flavor and process perspective. This involves identification, assessment and implementation of raw materials to meet product requirements at different stages of process development (bench-top, scale-up etc.)

- Assist in setting up and execution of sensory panels (creating test design, data recording and analysis).

- Responsible for the calibration of thermometers, pH meters and scales. 

- Maintain the raw material inventory up-to-date for FA group.

- Maintain, and update current formulations, where required quality specifications and SOP’s.

- Clean and maintain good conditions the food applications lab (e.g. bench-tops, fridge, water baths, cabinets, cooking utensils, etc.).

- Assist with the running and maintenance of laboratory/pilot plant equipment (such as pH meter, Microthermics, etc.).

- Set up and manage shelf stability testing of ingredients and products

- Manage and maintain external communications and relationships with vendors, external laboratories, and inter departmental clients.

- Prototype new product concepts and scientifically evaluate prototypes against benchmark product success criteria.

Knowledge and Skills

• The individual must have a positive, practical attitude with strong technical skills.

• Working knowledge/experience in food ingredients (e.g. starches, hydrocolloids, protein concentrates, etc.), their functionality.

•  Working knowledge/experience in food processing operations (e.g. agglomeration, spray drying etc.) is a plus.

• Able to document accurate and detailed logs of experiments and formulas in a standard laboratory notebook according to Good Laboratory Practices.

• Organized and is able to efficiently manage workload, setting priorities in conjunction with the team in a dynamic R&D environment.

• The individual must be able work cooperatively and effectively as part of a team and in an independent manner as required.

• Able to follow established procedures and take direction effectively.

• Able to proactively look at opportunities of improvement and take ownership of tasks assigned to them.

• Basic notions of sensory science are a plus.

• Working knowledge of MS Office is required.

Education and Experience

• Bachelor’s degree in Food Science is a must. 2-4 years of experience in product development is required.

Travel requirements

• Domestic travel may be required for product trials (minimum travel, < 2 weeks/ year).
