Executive Director of Food Safety - Johnson & Wales University

The executive director of food safety is responsible for providing leadership, direction, and oversight for university-wide food safety, and ensures regulatory compliance  


Essential Job Functions:


Develops and maintains university protocols and standards for food safety as required by federal, state, and local regulatory agencies, and conducts internal audits of facilities and events


Develops, implements, and monitors university-wide food safety management systems to oversee food safety in various facilities and operations including culinary and hospitality laboratories, student dining facilities, and practicum properties


Provides food safety guidance and training to faculty, staff, and students, and coordinates the inspection activities of food safety staff to maintain university-wide compliance with food safety standards


Reviews and analyzes field inspection reports and summary data to assess and address concerns

Maintains and edits the Food Safety and Sanitation Manual


Collaborates with other departments to assess and minimize the risks involved with maintaining proper

sanitation, including facilities design, supplier control, equipment maintenance, chemical management and pest control


Stays abreast of new or changing regulations, standards, and best practices in the food safety industry to proactively integrate these developments into university practice and curriculum


Assists with the departmental budget


Supervises and develops the department staff, facilitating professional opportunities to improve individual capability and managing performance against job accountabilities, department goals and established university, campus and department policies and procedures


Performs other duties as assigned


Required Qualifications:

Minimum of a bachelor's degree

Significant amount of experience working in operational food safety, foodservice sanitation, or other related experience 


Preferred Qualifications:

Master's degree

Field of study: food science, public health, or related

Experience managing food safety compliance in a multi-site educational or retail environment

Knowledge and proficiency in the basic fundamentals of culinary arts
