Food Technologist - Colorado Premium Foods - Denver, CO

 

 

 

Summary: The successful candidate will interface with customers and suppliers during ideation and new product development; coordinate the development of cutting strategies, flavor profiles, shelf-life parameters and final product specifications for test products; identify and implement effective and innovative packaging strategies for value-added products; optimize yield, flavor and performance of existing product lines.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Modifying existing products and developing new ones
  • Developing specifications for new products
  • Optimization of specifications for current products
  • Optimization of flavor, texture and tenderness profiles for existing products
  • Conducting sensory panels for newly rolled out products and those in development
  • Arranging and reviewing results of raw and cooked product audits
  • Collaboration with ingredient manufacturers
  • Direct correspondence with customer base regarding product development needs
  • Responding to consumer queries when appropriate
  • Hosting and collaborating with visiting research and development teams
  • Investigating different meat cutting strategies which add value and/or increase yield
  • Conducting shelf-life studies for new and existing products
  • Checking and improving quality control procedures in your own and suppliers' factories, from the raw material stage through to the finished product
  • Researching current consumer markets and latest technologies to develop new product concepts
  • Selecting raw materials and other ingredients from suppliers
  • Preparing product costing based on raw materials, yield and manufacturing costs to ensure profitable products
  • Undertaking long-term projects with other departments, e.g. reducing waste by improving efficiency
  • Working on packaging innovation and technology
  • Carrying out process support and development, new product development and quality control
  • Developing the ability to repeat processes to ensure consistency and safety
  • Liaising and cooperating with people and policies in quality assurance, operations, procurement, sales, marketing and distribution, and regulatory compliance
  • Working with engineering/production to develop solutions to production issues while maintaining food safety

Education/Experience:

  • B.S. in Meat or Poultry Science, Food Science or equivalent preferred
  • 2+ years’ experience in meat or poultry processing, food manufacturing or food product research and development
  • Development of value-added meat or poultry products with successful launch into food sector
  • Documented Food Safety training
  • Experience and/or formal training of different freezing, packaging and cooking technologies
  • Experience conducting and/or participating in trained sensory panels for beef or poultry products

Skills/Working Knowledge of:

  • Red meat quality grades and specification
  • Poultry attributes and specifications
  • Value-added meat and poultry cuts
  • Red meat muscle profiling – preferred
  • Labeling requirements for non-meat ingredients – preferred
  • Characteristics and properties of ingredients used in meat and poultry products
  • Different packaging technologies and subsequent influence on product characteristics
  • Computers – Microsoft Word, Excel, PowerPoint
  • Strong communication skills
  • Strong project management skills

Location:

  • Offices in Denver, Colorado
  • Travel between Colorado facilities required
