currently have an excellent opportunity for a Research Chemist\Food
Scientist located at our Princeton, NJ location.
general supervision, provides technical support for Research and Development
within VMS. Performs base formulation development, ingredient research, food
analysis, specifications approvals and product/process improvement
Researches, reviews, and summarizes applicable literature as it applies to
new and existing dietary supplement products and confectionery food products.
Produces reports, samples and presentations, as needed, demonstrating a
thorough understanding of the food industry, including a working knowledge of
confectionery science and materials used in confections.
Understand product stability throughout shelf-life and makes
Develops new product platforms from discovery through pilot production,
scale-up and product launch.
Evaluates prototypes, production samples, vendor samples, and other
Researches, reviews, and summarizes scientific literature, consumer trends
and market data as it applies to new and existing dietary supplement,
nutrition, food and confectionery products.
Suggests improvements to the quality of products. This includes, but is not
limited to the organoleptic profiles (flavor, color, texture, & odor)
actives product profiles (nutritional value & shelf life) & base
profiles (composition of products & finished goods stability).
Establishes and updates research and development files on an ongoing basis
Operates and maintains development lab processing equipment used for
prototype development and analysis.
Reviews and approves formulations, master manufacturing records, ingredient
sheets and other technical documentation.
Attends cross-functional meetings to contribute in the development process;
provides technical input; reviews status of projects in portfolio.
Assists in the interpretation of sensory evaluation trials and shelf life
studies, as applicable.
Performs impact and risk assessments on projects and products as necessary
(DFMEA / PFMEA / PFMEA).
Performs other related duties as required.
Education and Experience:
BS, MS plus five years of experience in Food Science or related field. or PhD with one year or more of experience sufficient to
successfully perform the essential duties of the job as listed above.
Skills and Competencies:
Must possess technical expertise in product development, food development
and/or flavor applications. Technical expertise in a wide variety of
confectionery applications including hard candies, fondants, creams, tablets,
lozenges, gums, jellies, high boiled candies, soft caramels, chocolate, fudge
and toffee is preferred.
Thorough knowledge of raw materials and processes used in the confectionery
o Understanding of confectionery
processesjellification, emulsification, crystallization, etc.
o Understanding of the physical and chemical properties of sweeteners,
colors, flavors and acids.
Can apply a working understanding of factors impacting quality and shelf-life
of sugar confections.
Knowledge of sweet, sour, and savory flavors and colors.
Knowledge of human nutrition, biology, and biochemistry.
Knowledge of natural supplements.
Knowledge of chemical and functional interactions of ingredients.
Ability to work on multiple projects, etablish
priorities, and adapt to tight deadlines and changing project parameters.
Ability to communicate effectively, both orally and in writing.
Ability to investigate and analyze information and draw conclusions.
Ability to convert ingredient amounts between single and multiple servings.
Knowledge of formulation software to help develop new product.
Working knowledge of general computing functions, including but not limited
to, Microsoft Word, Microsoft Excel, and Microsoft Outlook. Ability to learn
new computing skills, as required.
