Overview:

Responsible to oversee food safety affairs and executing the food safety programs for the shift. Assists the Food Safety Manager as the onsite food safety and regulatory authority at the facility. This position drives the execution of food safety systems at the plant by developing, modifying and maintaining the plant's HACCP, SSOP, and regulatory programs to ensure compliance with all regulatory requirements for the production of safe and wholesome food.

Responsibilities:

  • Assist in developing, implementing and validating science based HACCP plans and SSOP for each process/area within the facility.
  • Review HACCP and SSOP documentation to ensure compliance with all FSIS Regulations, Directives, and Policies.
  • Track and trend data to ensure new trends are not developing. Assist in developing and implementing a plan of action to improve areas identified for improvement.
  • Developing and implementing training programs to instruct employees to monitor and document HACCP, SSOP, and other required functions.
  • Responsible to oversee food safety affairs and executing the food safety programs for the specific shift. Maintain daily records of HACCP, SSOP and Regulatory paper work, reviewing to assure the production of safe and wholesome food products.
  • Enter data from the above records to track and trend information (NRs Foreign Material, Deficiencies, etc.),notify Management of any forming trends.
  • Provide guidance and participate in HACCP team meeetings and training.
  • Assist in Foreign Material Investigations.
  • Maintain required pathogen testing files and applicable corrective actions.
  • Maintain and perform verification of establishment HACCP related SOPs.
  • Perform SOP, SSOP, HACCP and monthly Food Safety Training.
  • Perform GMP and SOP audits.
  • Conduct monthly Food Safety Audit.
  • Conduct food safety meetings in the absence of Food Safety Manager.
  • Record USDA/Regulatory meeting minutes.
  • Participate in management meetings and communicate with management personnel regarding plant Food Safety issues.
  • Assist or fill in for Department Manager with other task such as; Responding to FSIS Non-Compliance.
  • Reports, conducting Food Safety meetings, complete weekly and monthly reports viewed by Corporate VPs and higher, effectively perform a mock recall, revise HACCP, SSOP and regulatory paperwork and plans as needed, validate HACCP and SSOP Programs, perform pre-operational inspection (as necessary).
  • Assist in developing, implementing and validating science based HACCP plans and SSOP for each process/area within the facility.

Qualifications:

  • Bachelor of Science Degree.
  • Three (3) years of experience in the Meat Industry (preferred).
  • Good communication skills, both verbal and written are required.
  • HACCP Certifcation.
  • Utilize influence and persuasion skills to reach desired results.
  • Excellent communication skills.

  • Ability to prioritize projects and set goals.
  • Systematic approach to problem solving.
  • Analytical Skills
  • Knowledge of Statistical Process Controls.
  • Technical knowledge of the meats and proteins.
  • Proficient in Word and Excel programs.

  • Must perform bending, squatting, sitting and reaching from floor level to six feet in height for filing and sorting.
  • Must be able to sit for the duration of two hours for computer work.
  • Must be able to stand and walk for the duration of two hours for observation studies.
  • Must be able to climb stairs and lift and/or move up to 25 pounds.

  • Must be able to perform studies on the production floor, work in temperatures ranging from 10 to 90 degrees F and in constant noise, exposure to fumes, dust, mechanical, electrical and safety hazards.
  • Must be able to work in cramped spaces and in poor lighting and ventilation.
  • Noise level in the work environment is usually moderate but can be loud if in the manufacturing/production environments.
