Research & Development Chef

Job Summary:

To provide fully culinary expertise in formulation and chefmanship within R&D in order to develop and deliver on time in full products for Food Solutions projects and support to key activities.

Build network with the Food Solutions business chef team ; ensure effective collaboration focused on project deliverables with emphasis on benchmarks & culinary requirements to ensure seamless delivery of quality innovation projects on time in full.

Own quality of prototypes within R&D to ensure highest quality is always achieved; Push the boundaries of quality within R&D.

Inspire culinary and creativity within the R&D team including management of showcase/presentation/lunches for visitors to R&D and for R&D events.

Duties & Responsibilities:

Work with Foodservice business chefs  to understand a) new innovations- benchmark developments  b) category trends and c) product trends.

Convert chef gold standards into working culinary prototypes using combination of industrial and semi-commercialized ingredients; effectively hand over and communicate to food scientists for further design and deploy activities.

Own the quality of R&D product development ensuring it meets chef benchmark, by supporting and challenging Food Scientists during product & process development.

Drive culinary and creativity within R&D department through individual as well as team training &  events and establishing strong links with Food Solutions business chefs.

Drive customer/BOH/FOH understanding within R&D team to raise the bar in foodservice understanding.

Maintain overview of new ingredients available from suppliers that are applicable to relevant cross categories for future developments; use to inspire and push the boundaries within R&D.

Responsible to establish network with other R&D formulation chefs especially those in (Retail, Regional; Deploy Centers) and Europe (esp. Global Design Centers).

With QA: to flag product performance issues and to provide culinary knowledge in the assessment of customer complaints.

Provide culinary evaluation and sign off approvals to solve supply chain emergencies, VIP Projects and factory transformations.

Provide culinary guidance to assist cross functional project teams to deliver on time in full.

Key Requirements:

Associate Degree in Culinary Arts. 

Bachelor of Science preferred.

C.C.S. preferred (Certified Culinary Scientist).

Expertise in Food Science/Culinology.

Cross-Category Product development  experience.

Knowledge/experience in Foodservice preferred.

5 year minimum product development experience.

Enjoys Hands-on/practical work.

Enjoys experimenting with food.
