Kellogg North America Company seeks a Product Development Scientist in Battle Creek, MI.
Summary of Duties:
∑ Participate in pre-PDR concept testing. Develop prototypes corresponding to top scoring concepts to define food objectives for PDR development. Develop prototypes for consumer testing that meet the food and financial objectives outlined in the PDR. Fully document all project formulas and testing results. Input consumer test formulas and official formulas into SAP formulation system. Ensure that formula undergoes FAIR evaluation prior to IHUT testing.
∑ Work with Procurement to determine ingredient availability/cost information. Determine critical ingredient specification parameters and communicate these to Quality. For new ingredients, have vendor complete consumer screening information request form. Get ingredients approved in formulation prior to consumer testing. Schedule equipment and provide test plan to the pilot plant team for all scale-up and IHUT testing.
∑ Ensure adequate raw materials, resources, and timing for pilot plant testing. Work with Quality and Nutritional Regulatory Affairs to identify potential allergen and safety issues. Confirm that nutritional requirements are met. Set up appropriate shelf life and sensory testing plans in accordance with the distribution requirements of the product. Work with Process Engineer to understand and define process needs and capabilities as they relate to the targeted production line. Provide tentative formula and processing parameters to corporate and plant engineering teams to support the development of the FEL package.
∑ Assist Process Engineer and Lead Food Tech in identifying issues and making preparations for plant testing. Assist the Lead Food Tech with plant testing and startup preparation. Give input for both the plant test plans and production start-up. Coordinate and assist in the coordination of IHUT production in pilot plant or manufacturing plant. Produce image plant food to field in IHUT. Submit IHUT test samples for chemistry analysis to generate nutrition labeling information. Support BASES and Sales Sample production.
∑ Provide input to Nutritional Regulatory Affairs to generate nutritional information to ensure product labels are correct. Work with Packaging support personnel to coordinate testing as it relates to packaging material/food interactions, pack fit, and distribution. Issue approved formula to plant for raw material ordering prior to startup. Assist Quality and Operations in establishing the "Image and Defect" Quality Manual and supporting process documentation. Support the lead Food Tech in executing the startup plan, address start-up issues, and participate in general startup activity.
∑ Attend and support daily team meetings and food reviews during production startup. Work with Lead Food Tech, Quality representative, and Plant to refine and optimize the process, reduce COGS, and resolve quality issues. With Quality, provide start-up food samples for Image Panel review for release of food.
∑ Masterís degree in Food Science, Engineering, or related field of study and two years of experience in the job offered or two years of experience as a Product Developer, Product Development Intern, or related role.
∑ Bachelor's degree and 5 years of experience may be accepted in lieu of Master's degree and 2 years of experience.
∑ All applicants must have demonstrated experience with executing experimental design in food product development; troubleshooting; shelf life and sensory testing tools; utilizing technology, equipment, and formulation of confectionary syrups and dry ingredients used in agglomerated bars; utilizing fiber, protein, and confectionary compound coatings; utilizing gelatin based syrups to optimize texture, flavor and nutritional composition in agglomerated bars; developing formulas and manufacturing baked granola with fiber claims; developing cookies using Wire-Cut, Rotatory Molded, Extrusion, and Depositing technologies; controlling baking processes and formulation of bake stable fillings (starch and alginate) to provide desirable organoleptic properties in baked products; tempering, shredding, extrusion, puffing and coating of grains to form ready to eat cereals; developing products that require moisture management in multi components food systems and commercialization of national branded food products in the USA, Latin America and Canada; and partnering with local manufacturing facilities.
