Job Description

Position Summary:

This position carries primary responsibility for new product development activities and project management.

Primary Responsibilities:

·     Responsible for product/process development to meet stated targets or gold standards, including flavor, texture, quality, cost, and any other parameters defined. May include new product development and/or redevelopment/reformulation of products and/or processes.

·     Drafts routine experimental designs without assistance. Can readily utilize statistics in designing and interpreting experimental results.

·     Individual is self-motivated and requires some supervision.

·     Scales-up products from benchtop to the pilot plant with some assistance required for commercial production scale-up. Recommends equipment to complete the project. Recommends processing procedures on new and existing products to ensure food safety and fulfilling shelf-life requirements.

·     Adapts and utilizies most existing technologies for routine research; may develop some new technologies.

·     Identifies primary experimental variables with minimal assistance.

·     Demonstrates a complete knowledge of all available food ingredients; identifies and evaluates potential new ingredients. Rapidly formulates most food products with minimal assistance.

·     Knowledgeable of USDA, FDA and other local, state and federal laws and makes sure that the company stays within compliance. Generates food labels with all information generated.

·     Exhibits a professional attitude at all times; demonstrates a cooperative demeanor and willingness to help others.

·     Directs and monitors the activities of any technician assigned to him/her. Responsible for training and motivating subordinates.

·     Designs and executes shelf-life tests with minimal assistance; interprets the results with minimal assistance.

·     Utilizes, designs and interprets a wide variety of sensory testing techniques. Utilizes sensory services within and outside the company.

·     Proactively identifies and recommends cost savings projects.

·     Drafts quality control standards and specifications of finished products and ingredients used with minimal assistance.

·     Utilizes an integrated, efficient approach with no assistance to solve difficult technical problems by properly conducting a literature search and review, identifying major variables, developing a hypothesis, drafting effective experimental designs, precisely executing experimental designs, skillfully interpreting results and initiating actions based on those results to solve the problem.

·     Proficient in using Microsoft Word, Excel, Powerpoint, Sharepoint and Outlook as well as Genesis nutritional labeling software.

·     Documents work and discoveries via laboratory notebook, R&D computer database (sharepoint), R&D Central Filing System, and other systems used by the department to develop and maintain complete project documentation.

·     Hires, coaches, evaluates, and schedules a Food Technician.   Provides direction and oversight to the Food Technician. Responsible for maintaining adequately trained team member to accomplish R&D requirements.

·     Follow established programs, policies, and practices to produce safe quality foods that meet regulatory and company requirements.

·     Maintain accountability to Oberto Brands Food Safety and Quality Principles.

·     Support the development, implementation, maintenance, and ongoing improvement of the SQF 2000 Systems.

·     Performs other related duties as assigned.

·     Investigates new technologies, ingredients, equipment and processes to the benefit of the Company.

·     Aids Operations in problem solving opportunities and acts as a technical support when operational issues arise.

·     Stays abreast of emerging trends in the food industry, including the restaurant trade.

·     Brings new ideas and concepts to the organization to further its innovation activities.

·     Develops and maintains excellent relationships with vendors, suppliers, and customers – both internal and external.

Required Experience

·     Bachelor’s degree in Food Science/Technology, Meat Science or related field required

·     3-5 years of experience in food product development/formulation.

·     Experience and or advanced degree (M.S., Ph.D.) will be considered in lieu of experience.

·     Interest in food and ability to cook are required. Experience and/or education in cooking or culinary skills are a plus.
