Job Description
The position will be with the Wyle Bioastronautics Contract supporting the research and development of Advanced Food Technology (AFT) projects in the Space Food Systems Laboratory (SFSL) at NASA’s Johnson Space Center. The successful candidate will provide scientific expertise and strategy for the applied and basic research plan relative to space food system development for all aspects of exploration missions. The work will specifically address nutritional stability; acceptability; food as a countermeasure to disease and as a countermeasure to bodily changes in extreme environments (i.e. altered gravity/pressure/extraterrestrial missions); safety; and resource utilization.

Essential responsibilities include:
--Lead and/or support intramural research efforts in Advanced Food Technology.
--Direct and assist in the product development of highly nutritious, shelf stable foods, either low moisture, or processed by lyophilization, or retort thermostabilization in pouches.
--Develop grant proposals for submission to NASA Research Announcements, or other granting organizations to investigate novel approaches that may achieve food system goals for exploration missions.
--Direct and participate in shelf life studies and data analysis of flight foods.
--Ensure necessary communication and planning with flight provisioning to meet project deadlines and ship dates effectively for science related food upmass.
--Prepare research reports and manuscripts for peer reviewed publications.
--Support the working groups and meetings of food system related stakeholders, including intramural and extramural researchers, US and international scientists, flight surgeons, engineers, and astronauts.
--Establish and maintain collaborative initiatives for developing scientific/technical research.
--Provide expertise in scientific, technical, and operational forums focused on NASA food system related countermeasure development.

Basic Qualifications
• Ph.D. in food science or a closely related discipline

• Peer-reviewed publication record (2 first-author publication minimum)

• Excellent written and oral communication.

• Mastery of Microsoft Office suite including Word, Excel, Powerpoint, and Project applications.

Desired skills
• Prefer at 2 years professional experience in food science related field

• Knowledge of food related research and activities in academia, government, and private industry.

• Expertise in statistical design and analysis.

• Experience using EndNote, Compusense, STATA software applications.

• Knowledge of HACCP, GMPs, safe food production.
