BASIC PURPOSE & SCOPE

Formulates products that are developed by using multiple bakery (common and uncommon) ingredients. From the beginning of the developmental process to the project conclusion and communicates all results to the R&D committee for feedback and direction. Receives projects and priorities from the R&D committee, coordinated by the R&D Manager. Projects typically involve formulating new products and concepts through the use of stock or new to market ingredients and re-formulating existing products to improve quality.

*ESSENTIAL FUNCTIONS

  • Experimental design establishment.
  • Bench work research of new products.
  • Test run scheduling and set-up.
  • New products follow through with manufacturing.
  • Understanding of Cookietrees’ process strengths and weakness’.
  • Knowledge of new ingredient(s) and their functionality.
  • Technical ingredients research to assist purchasing with sourcing and approving suppliers.
  • Knowledge of Cookietree stock ingredients; How developed or produced and the functionality of each as used for our products.
  • Thorough knowledge of final goods and product specifications.
  • Responsible for keeping accurate records of daily activities and R&D projects including the following information, approval determined by project initiator/R&D Committee.
  • A comprehensive knowledge of ESHA Food Processor 11 software to determine nutritional profiles for new product developments.

BACKGROUND/EXPERIENCE

  • Associates degree in Food Science and or a minimum of two years of laboratory experience.
  • Skills in the use of analytical scales, pH meter, sodium ion meter, IR moisture analyzer, and gravity convection drying oven.
  • Proficient with MS Office; Word, Excel, Genesis R&D (nutrition and formulation program).
