It is the primary responsibility of the Food Safety and Sanitation Manager to ensure compliance with all government regulations for all permitted Property facilities to include maintaining Southern Nevada Health District (SNHD) Food regulations and Property Food Safety Sanitation standards and policies. All duties are to be performed in accordance with departmental and Property policies, practices, and procedures.

o    Maintain professional working relationships with various internal departments and relationships with external regulartory agencies, to include SNHD, FDA and USDA.

o    Maintain Food and Beverage Food Safety Training Courses, working closely with the Divisional Training Manager and other MGMRI Learning and Development personnel.

o    Conduct internal inspections of all pantries, bars, lounges, kitchens and warehouse facilities.

o    Active member of the Property Safety Council and Nevada Safety Task Force.

o    Ability to deal with personnel on all levels and address environmental health issues within different departments; be involved with all environmental health issues throughout the Hotel.

o    Ensure FOH and BOH employees meet both State and departmental requirements concerning sanitation and personal hygiene.

o    Provide employees with proper Food Safety and Sanitation Training.

o    Perform other job related duties as assigned.

Required:

o    Bachelorís degree, Environmental Health Degree or equivalent work experience.

o    At least 5 years of experience within a regulatory agency or in an environmental health field.

o    Certification in ServSafe, Food Manager or Food Safety Professional, or HACCP.

o    Working knowledge of FDA, USDA and CDC guidelines.

o    Able to lead and mentor a team.

o    Have interpersonal skills to deal effectively with all business contacts.

o    Professional appearance and demeanor.

o    Work varied shifts, including weekends and holidays.

o    High school diploma or equivalent.

o    Able to effectively communicate in English, in both written and oral forms.

Preferred:

o    REHS/RS certification.

o    Previous experience working in Food and Beverage operations within a major hotel/casino or in a similar resort setting.

o    Previous experience working in a similar resort setting.
