Bar-S Foods, a recognized leader in the packaged
meat industry is currently seeking an experienced Food Technologist to be
based in our Lawton, OK or Altus, OK facility.
The position is eligible for excellent compensation

- Implementation of
procedures, ingredients and materials towards the improvement of
quality and product cost. The implementation process involves every
step of the operation from the receiving of raw materials to the
packing of finished product, as well as documenting the process
variables that might render a product out of compliance.
- Labeling compliance of
current and newly developed finished product. In this role, the food
technologist is in charge of the submittal of temporary, sketch or
extension of temporary form 7234 to the U.S Department of
Agriculture through the Food Safety and Inspection Service.
- Compliance of Mexican
export labels. The exported product from our plants in Seminole and
Clinton OK, require the strict adherence to Mexican official norm
051 which establishes the labeling requirements of a prepackaged
food product in order to be sold in the Mexican territory. It is the
food technologist responsibility to enforce the adequate observance
of such norm.
- Testing of new ingredients
in small-scale, controlled environments. In certain occasions it is
necessary the testing of small batches to avoid disruptions in the
manufacturing plant due to the use of new flavors or ingredients;
these small-scale tests are usually performed in pilot plant.
- Follow-up of laboratory
results of new products and trend plotting. Once there is the
implementation of a new product, it is important to track the
chemistry test results in order to build the upper and lower limits
for a specific parameter, and upon those limits, to verify the
adherence to the specifications for the measured parameter (i.e.
%salt, %fat, %protein)
- Enforcement of the
Product's Standard Technical Instructions (STI). The STI are the
standardized recipe for a given SKU, the observance of such STI will
render a product with optimal quality.
- Implementation of
laboratory procedures. New lab techniques are to be implemented as
well as new sampling procedures.
- Other duties and
responsibilities as assigned
Must be familiar with further meat processing
including formulation, process and product implementation. Must have
knowledge of HACCP, SQF, GMP, Process equipment, Product improvement and
troubleshooting for any challenges process in the raw to finished goods
- Bachelorís degree in Food
or Animal Science or related field required, Masterís degree
- Three yearsí experience in
the meat or food industry
- Strong knowledge of USDA
and FDA Regulations, including Labeling and Nutritional facts
- Knowledge of Consumer
Marketplace, including food trends
- Excellent written and oral
communication skills required. Ability to work with multiple
departments while maintaining QA standards
- Proficient with Microsoft
Office Suite, excellent Excel skills
