Rubio's is looking for a Product Development Technician!
The Product Development Technician is responsible and accountable for
Rubio’s culinary test kitchen, assisting product development managers with
product innovation, conducting yield studies, new product test training,
store audits and formatting questionnaires and data analysis for consumer
ESSENTIAL JOB DUTIES
Culinary Test Kitchen
• The following are shared responsibilities with another technician. Must
organize, maintain, clean and stock all areas on a routine basis
o Maintains current
inventory of all stock items (ordering through USF)
o Orders additional food products and smallwares upon request
o Keeps a detailed log of
all in-coming samples from suppliers/vendors
o Responsible for prepping and cleaning for showings,
presentations and sample cuttings
o Compliance and training of recipes within the
Rubio’s test kitchen
• Maintains all equipment and small wares
o Prep the kitchen for all “kitchen working”
sessions including turning on all standard equipment
o Responsible for
“closing” the kitchen on a daily basis. Ensuring all equipment is turned
Assist Product Development Managers
• Assists Product Managers with cook, hold and yield studies; records data
and prepares detailed analysis
• Assists Product Managers with training and in-store auditing of new
• Assists in the development of project plans and materials for
distribution to all levels of management including planning and
coordinating meetings with company and non-company personnel
• Format questionnaires with input from Project Managers and Marketing for
Buyer Reaction Studies, Sensory Panels and other types of Consumer Insights
• Using Survey Tracker and Scantron, download all
questionnaires into system and create reports for Project Managers and
Marketing to support a variety of team efforts
• Statistical skills and ability to analyze sensory data and create
reports. Emphasis on analytical skills and statistical understanding.
NON-ESSENTIAL JOB DUTIES
Performs similar and incidental duties as required.
Education: Food Science or Culinary Arts related degree preferred
Experience: Two years kitchen management and assisting with studies
involving food and packaging. Computer experience in Excel, Word,
Knowledge: Good computer skills with Excel, Word, PowerPoint.
Capacity to learn Survey Tracker and Scanton
Language Skills: Good oral, written and presentation skills. Good
Math Skills: Overall skills and knowledge of mathematical principles and
Abilities: Ability to rely on his/her judgment and experience to accomplish
goals. Ability to solve practical problems. Ability to manage time
effectively, especially when presented with multiple tasks. Ability to ask
questions and seek additional information when necessary to get the job
done. Ability to work in a team environment. Ability to effectively present
information to all levels of management and outside vendors.
Reports to the Senior Manager, Product Development
MAJOR BUSINESS/PROFESSIONAL CONTACTS
Weekly contact with vendors to obtain samples and product specifications.
Ability to communicate clear and concise directions to vendors, peers and
restaurant personnel to achieve desired outcome. Interacts with all other
Restaurant Support Center departments. Works independently on several
projects, requiring self-discipline and motivation.
WORKING AND ENVIRONMENTAL CONDITIONS
Flexible work environment. Time split amongst a variety of jobs and
tasks. Requires regional travel approximately 10 - 15% of the time.
Working in the test kitchen, sitting at a computer and regional travel a
part of each week.
