Description

Based at our Woburn Support Center, you will be responsible for designing, implementing and measuring a cross functional strategic food quality assurance program from origin of manufacturing raw materials through completed finished goods insuring best of class, safe products are utilized in the preparation of all menu items.

You will also design, implement and measure a restaurant operations food safety program inclusive of all restaurant departments to ensure compliance with government and company regulated standards for physical restaurant environment, food preparation, product handling and ware washing methods.
 

 

Essential Duties

Quality Assurance

         Develops/manages written product specifications for each product utilized within the operating concept which include critical to quality attributes.

         Comprehends micro, chemistry and physical testing technology and able to incorporate knowledge into sound specification parameters.

         Ensures a 3rd party audit program for suppliers and distributors is active and current.

         Conducts periodic product evaluations to measure supplier compliance to specifications and effectively communicates findings.

         Investigates and resolves reported product problems in distribution and restaurant operations through effective communication methods.

         Develops and manages a product quality complaint system for restaurant operations that is inclusive of suppliers and distributors, insures an ongoing data base of complaints and supplier related issues are current. Develops and monitors supplier corrective action plans to completion.

         Initiates and manages a standardized withdrawal, recall and advisory program, coordinating and communicating all essential functions to effectively remove any food safety or specification compliance products.

         Provides technical support to supply chain sourcing throughout the life cycle of a product.

         Conducts plant audits to ensure supplier compliance with best manufacturing practices, HACCP, FDA, USDA, 3rd party audits and SQF certification level.

         Monitors industry issues and effectively communicates trends and risk that may affect the quality of supply of products or commodities.

         Develops and manages a supplier compliance program to ensure enterprise MMA agreements are current prior to any supplier engagement in addition to approved suppliers certificate of insurances are renewed and current prior to any expiration dates.

         Provides technical support to risk management throughout the life cycle of a guest facing incident.

Food Safety

         Develops/manages a proactive comprehensive restaurant operations food safety program.

         Monitors and remains current to Federal, State and local regulatory food codes and issues, effectively integrates, communicates program revisions to restaurant operations.

         Develops an ongoing training program for Operations Directors and restaurant operation teams to ensure full compliance with comprehensive concept food safety program.

         Develops operations leadership restaurant compliance audit program and conducts periodic audits to ensure program compliance.

         Develops and manages an all restaurant health department inspection report data base and identifies critical trends and provides corrective action plans and or program updates.

         Provides periodic reporting to President and Senior Leadership Team regarding concept level food quality and food safety risks.

         Develops and maintains a comprehensive allergen sensitivity program for restaurant operations teams to meet or exceed government regulations. Partners with Learning & Development to ensure compliance training is active and certifications (where applicable) are achieved.

         Provides on-site support for critical events such as food borne illness, contagious disease outbreaks, critical health inspector identified restaurant violations or any other food safety sensitive matters.

         Support Facilities team in new restaurant or remolding projects ensuring all applicable health department and safety regulations are in place during planning through to completion stage.

         Manages food safety chemical and ware washing program and develops measures of compliance for restaurant operations. Approves and initiatives proactive tests of new chemicals to meet or exceed food code standards. Partners with Facilities to ensure an effective cross department functional chemical program is in place.

         Partner as a liaison to Learning and Development to ensure compliance of all food safety standards are identified/integrated into all learning programs for all restaurant operations team positions. Monitor serve safe and allergen certification compliance standards of all team managers.

 

Requirements

         Culinary Degree, Bachelorís Degree or above in a related field is required. 

         Five years of Restaurant Management experience is highly preferred.  

         Five years of experience in quality assurance audit, developing and implementing food quality policies and procedures or related experience required.

         Five years quality assurance control and or food safety experience highly preferred.

         Basic knowledge of Microsoft Office Suite Products; intermediate skill level required in Excel.

         Excellent verbal and written communication skills.  Must possess a solid understanding of the English language, must possess people training skills, basic math and reasoning skills.

         Must be able to read documents, perform detailed work and prepare written reports accurately.

         Strong ability to deal effectively with people, especially outside Regulatory Agencies, and to enlist needed cooperation in implementing regulatory requirements.

         Rely on work experience and judgment to plan and accomplish goals; perform a variety of multi-tasking skills while directing and leading the work of others. 

         Work in an environment in which quality assurance, safety, security, environmental and health concerns demand constant attention. 

         Use sound judgment in day-to-day decisions by applying the companyís vision, values and culture.

         Comprehensive knowledge of food manufacturing, USDA/FDA regulations, FDA code and recall procedures preferred.

         Valid Driverís License and car insurance is required.

         Food Certification is required (Serve Safe or National Registry of Food Safety Professionals).

         Applicable certifications ongoing as required by Federal, State, Local or company standards.
