Job Description


Provides accurate descriptive, nutritional and ingredient labeling for all product labels, ensuring that specifications meet Food and Drug Administration regulations. Develop new products for both internal and external customers. Provides support to the bakeries for new product roll out and process improvements.



  • Establish and verify specifications of dessert products in use and those being developed.
  • Maintain descriptive, nutritional and ingredient labeling and coding for products produced in plants and ensures established labeling is in compliance with all applicable laws and regulations.
  • Audit product ingredient information and labeling procedures for accuracy and report any discrepancies to the Test Kitchen Manager and or Director of Purchasing
  • Responsible for the file maintenance systems that ensure all food specifications are current, correct and compliant with SAP, SQF and product labels.
  • Maintains customer files that dictate individual customer requirements for labeling. Identifies the chain of command for each customer’s approval process.
  • Responsible for precise communication with printers on label changes.
  • Works closely with LB marketing to assure a smooth flow of information needed to keep projects moving forward.
  • Evaluate ingredients and products used in the development and production of finished goods; ensure compliance with specifications and standards that have been defined during the test and trial periods of new products.
  • Works with purchasing to identity secondary suppliers.
  • Responsible for weekly updates on new ingredient testing process, where we are, how it is working, what are next steps, etc.
  • Develop new bakery products by staying aware of current menu trends, new processes and ingredients that are being introduced in the marketplace.
  • Produce customer samples in the test kitchen; obtain appropriate approval and send finished product samples to LB customers.
  • Organize and schedule product showings and dessert presentations to internal and external customers. Capture information discussed during these presentations for future knowledge and to assist in identifying additional action items as needed.
  • Confer with external ingredients suppliers, engineers and equipment manufacturers to verify standard operating procedures for the various products being tested and manufactured at LB bakeries.
  • Test and recommend new ingredients and procedures for LB products that improve quality, efficiency and costs as well as test and recommend new ingredients when needed to fill the supply chain.
  • Assist in training LB bakery personnel in new product specifications and procedures as needed.
  • Partner with R&D and Supply Chain to identify appropriate packaging materials required for bakery products.
  • Communicate to Supply Chain the specifications for sourcing new products.
  • Perform all assigned duties and projects as assigned.

  • Effectively plans work schedules to implement the action needed to accomplish the weekly department goals and objectives; plans, forecasts and replenishes the vital product output as needed.
  • Organize work space well; be very orderly and systematic in tracking ingredients for samples.
  • Perform detailed work in a proficient manner meeting deadlines; work well under constant interruptions and time sensitive deadlines.
  • Create and produce desserts requested and described by customers; be able to consistently produce professional-quality desserts and reproduce samples consistently.
  • Demonstrate strong interpersonal skills requiring the ability to resolve conflicting interests with the goal of obtaining cooperation; work well within a team environment.
  • Present facts and recommendations effectively in oral and written form; communicate effectively in a professional manner, with the LB R&D team as well as other internal departments.
  • Work with a team orientation and continually demonstrate problem-solving skills and the ability to work with little supervision; demonstrate the use of independent judgment in problem solving.
  • Read logs and comprehend regulations by Government Agencies.
  • Apply basic math skills.



  • Bachelor’s Degree in Food Science Technology or equivalent work experience in related field is required.
  • Four years of experience in R&D, preferably in a food manufacturing environment is necessary. In addition, one to two years of culinary experience is preferred.
  • Requires intermediate skill level of Microsoft Office Professional products; SAP & Genesis experience is preferred.
