Job Summary

Develop and assist with commercialization of chicken sausages and other food and meat products that that are in line with current food trends and that exceed company goals and customer expectations.

Responsibilities and Duties

Responsibilities

  • Develop products from concept ideation to actual product prototype with eventual transfer to plant floor to launch
  • Prepare new product samples for Sales and Marketing presentations and ensure samples are of the highest quality and representative of plant made products
  • Participate in new product ideation and presentations with sales and marketing
  • Update and re-size test formulation for sample preparation of new and revised products
  • Participate in product improvement and reformulation projects
  • Works closely with other members of the New Product development team in developing formulations, scaling sheets, product make-up specifications and finished product specifications.
  • Provide information for product costing
  • Actively involved and is present during all plant trials and first production for new products
  • Works with production in the continuous improvement of efficiencies and waste reduction
  • Trouble shooting process related issues
  • Respond to performance issues in the field based on feedback from customer
  • Undertake any special assignment or project as directed by the R&D/NPD Manager
  • Maintain proper documentation of formula development (recipes, methodology, deposit weights and baking losses) and track project progress in department folders
  • Coordinate and participate in the new product development process benchtop through to plant trials and commercial production
  • Keep current with food, unique flavor profiles and consumer trends
  • Adhere to all applicable job procedures as outlined in SOP manual
  • Adhere to GMPs and Health and Safety rules as outlined in employee handbook
  • Keep work area clean and clear of hazards
  • Report any unsafe conditions, incidents or injuries to supervisor immediately
  • Use all prescribed personal protective equipment * Ensure GMPs and safe food handling practices are being followed
  • Monitor and enforce GMP compliance by all operators
  • Ensure all work areas are clean and organized and free of spills, water, wood, and debris
  • Complete incident reports for all GMP incidents
  • Follow up with any reports of unusual people or behaviors * Perform all other duties assigned

Qualifications and Skills

Skills, Experience & Qualifications

  • A good understanding of meat production and processes and an ability to translate lab concepts into finished products
  • Demonstrates creative and analytical skills, ability to adapt to changing priorities, results and time oriented
  • Effective organizer - can handle several projects at the same time and can take product from conception to saleable product
  • Service oriented
  • Hands on experience in cooking and flavor development
  • A pulse on current food trends in the market place
  • General awareness of ingredient functionality and production process for different product categories
  • Effective communicator - able to listen effectively
  • Strong communication and presentation skills
  • Knowledge of basic computer systems

Required Education, Technical Qualifications, Experience and Competencies Proficiency Level

  • A degree in Food Science or Culinary Certificate from a recognized institution

Preferred

  • At least 1 - 3 years experience in the food industry, preferably in meats or perishables
  • SQF Practitioner and HACCP Certification
