The Manager of Food Safety and Quality Assurance will lead the
department by leveraging best-in-class systems, analytics, and strategic
planning to ensure the food safety and quality of our products across our
food businesses, both within our theme park, and on CityWalk.
This position is responsible for developing a corporate Food Safety
and Quality Management System and team to ensure employee and consumer
safety and welfare and to ensure the wholesomeness and integrity of all
product served by Universal Studios Hollywood. This position works in
accordance with the company’s values and promotes the development of a
strong culture of integrity, respect, service, and food safety.
The Manager of Food Safety and Quality Assurance will be the
company’s subject matter expert for all food safety regulatory and quality
assurance related concerns. This individual will collaborate with the
company’s Legal, Culinary, and Operations team (as well as outside
consultants) to develop the company’s HACCP Plan and establish those
regulatory guidelines and certifications relating to food safety which must
be maintained (including but not limited to the Food Safety Modernization
Working in collaboration with Training and Operations, this position
will define those training processes required to educate employees on HACCP
and as to their impact on food safety and quality management processes.
Continuous and ongoing improvement shall be a key focus of this
role, both in terms of education and in raising awareness, as well as with
respect to systems and process improvement. This Manager will collaborate
with the VP of Culinary to define GMP’s and HACCP program for the company’s
Production Kitchen and Restaurants. This position shall define strategic
objectives and ensure the success of short term operational goals.
This position shall also be responsible for surveying and
validating the appropriateness of the company’s vendors and suppliers
(within Food and Beverage) to ensure that the proper levels of risk
management and quality assurance (including hold-harmless, indemnification,
etc.) are maintained throughout the supply chain. This position
collaborates with UPR (Universal Parks and Resorts) sourcing, quality, and
risk management leaders from time to time as needed.
The Manager of Food Safety and Quality Assurance continually
collaborates with the company’s Facilities and Technical Services
Departments to maintain the adequacy, safety, and readiness of its
facilities and Carts, as well as compliance with all applicable codes and
This position shall spearhead the company’s efforts towards
certification against the Global Food Safety Initiative (GFSI) standards
either through SQF or BRC scheme.
Other duties and responsibilities as assigned.
• Minimum 7 years’ experience in Food Safety and
Quality Assurance. • Multi-Plant experience preferred, to include fresh meal
production and bakery. • Ideal candidate should have overseen QA/QC within facilities with
50+ employees and robust QA/QC processes, supporting revenues greater than
$75MM annually. • Experience with SQF or equivalent GFSI (BRC) auditing and plant
certification processes preferred. AIB audit and certification experience valued.
• Experienced in managing proper labeling and storage as relates to
allergens. • Experience with traceability, recall and food defense (food
security) programs • Strong foundation in HACCP (Hazard Analysis and Critical Control
Points), Preventive Controls for Human Food (FSMA) and GMP (Good
Manufacturing Practices) certification is critical.
• Bachelor’s degree in related field. • Excellent verbal and written communication, interpersonal,
organizational and multi-tasking skills. • Ability to effectively communicate across all lines of business,
and with all levels of management. • Strong organizational, planning, delegation, mentoring and
coaching skills. • Ability to deal well with ambiguity and constant change. • A strong passion for delivering the highest quality of guest
service. • Thorough knowledge of MS Excel, Word and PowerPoint • Experience with managing in a Union environment is preferred. • Strong analytical and risk management skills.
