JOB DESCRIPTION

The Research and Development Technologistsí responsibilities include: Applying scientific and engineering principles in research, development, production technology, packaging, processing, and utilization of food ingredients. Works as part of the Research and Development team to maintain and reformulate existing products, create and launch new products, develop and maintain food product labels and packaging, and provide support and assistance to production and quality control operations.

WORKING RELATIONSHIPS

Accountable and Reports to: Research and Development Director

PRIMARY RESPONSIBILITIES

Commercialization of new and reformulated products

Industrialize gold standard recipes

Ingredient and packaging sourcing, including ProcessPro set up

Plant trials

Develop production procedures and batch sheets

Work with Quality Control to address allergen/HACCP concerns

Coordinate store testing and food micro testing

Sensory testing

Product Costing

Develop and test preservation strategies

Product label development (Genesis, USDA, EZ Label)

Assist production operations in process optimization and trouble shooting

Develop manufacturing processes and procedures to maximize product quality

Develop product standards for ingredients and finished goods

Maintain record of research and development activities in lab notebook, including but not limited to: accurate product formulas, processing procedures, equipment requirements, yield data, and production notes

Maintain electronic and written product formulations to ensure completeness and accuracy

Maintain food product labels and product packaging to ensure accuracy and compliance with food labeling regulations

Audit ingredients

Maintain ingredient records including product specifications, nutrition data, ingredient & allergen statements

Provide weekly project status reports to management

Perform other duties as assigned

SECONDARY RESPONSIBILITIES

Assist with the qualification of new and secondary suppliers

Develop and maintain production procedures for D&D products

Meal preparation for special events

Maintain kitchen environment and Research and Development storage areas according to company standards for cleanliness and organization

Organize paper and electronic documents associated with ingredient label audits

Provide support and assistance to production operations as needed

Reports to work when scheduled and on time

WORKING CONDITIONS

The duties of this position are performed primarily in a kitchen or office setting with frequent plant and warehouse exposure

Frequent deadlines exist while handling multiple tasks

EQUIPMENT USED TO PERFORM JOB

Kitchen equipment, Personal Computer, Office telephone system, photo copier/scanner, fax machine, camera

SKILLS AND ABILITIES REQUIRED TO PERFORM JOB

Ability to multi-task with strong prioritization and time management skills

Ability to work in a cross functional team environment

Strong attention to detail and accuracy

Must have the ability to solve practical problems with a variety of variables and limited standardization

Strong critical thinking and analytical skills

Understand the need for and maintain confidentiality

MINIMUM EDUCATION REQUIRED TO PERFORM JOB

Bachelor of Science preferred- Culinology, Food Science or related

Associates of Applied Science Culinary Arts with Culinology emphasis

EXPERIENCE REQUIRED TO PERFORM JOB

Experience in food industry and/or retail food service

Knowledge of FDA and USDA labeling regulations

Proficient in Microsoft Office, particularly Excel

Experience with Genesis nutrition software

Experience with ProcessPro or similar production management software desired

Experience with EZ Label or similar product labeling program desires
