SUMMARY:
This positions assists in and independently leads some
projects. The Food Technologist ensures that foods are produced safely,
according to recipes, labeled correctly and made to specification to
present accurate nutritional information to provide consumers the necessary
information and comply with regulations. This positions
creates and maintains documentation for the R&D Department, including
recipes, specifications and label forms and others. **This position is a 3
month contract with a mid-May start date.
ESSENTIAL FUNCTIONS AND DUTIES:
- Work on assigned product
development projects
- Contribute new product ideas
- Build prototypes; validate
functionality of prototype in production; conduct sensory evaluations
and shelf life tests; guide new prototypes from bench top to
production line; conduct various analytical test methods as needed
(water activity, mocon, etc).
- Assist in modifying and
improving existing products and recipes. Accurately document and
maintain recipes in recipe books and other files.
- Coordinate microbiological
testing of new items with Microbiologists.
- Record and receive samples
from suppliers and manage storage.
- Closely work with Project
Commercialization Manager. Aide in successful execution of bench to
plant transition of products.
- Assist in competitive product
research and research experiments and analyze,
record and compile test results in presentable format.
- Assist Regulatory and
Compliance Specialist in creating and reviewing product labels in
accordance with the FDA & USDA labeling laws. Develop compliant
nutritional information, ingredient and allergen statements and other
labeling and recipe information for all of our products.
- Maintain a working knowledge
of US food safety regulations and Safe Quality Food (SQF)
requirements.
- Work with Suppliers to
maintain and update specs when needed.
- Accurately update and
maintain various records in different databases and spreadsheets.
QUALIFICATIONS:
- Bachelor's Degree in Food
Science, Nutrition or closely related science required.
- 1-3 years
experience in Research and Development, Quality Control or food
manufacturing required.
- Knowledge of Good
Manufacturing Practices (GMP's), NLEA (Nutritional Labeling Education
Act) and FALCPA (Food Allergen Labeling and Consumer Protection Act.),
SQF (Safe Quality Foods), USDA and FDA guidelines.
- Significant experience with
Microsoft Office Suite: Outlook, Excel, Word.
- Must be able to work on
multiple projects independently at one time, handle deadlines,
confidential information and interruptions in the work process.
- Meticulous attention to
detail, especially with regard to food, nutrition, safety and
regulatory information.
- Must be a good observer,
noting details and small changes precisely.
- Excellent written and oral
communication skills and ability to work well with team members.
- Strong analytical and
numerical ability to evaluate data.
