We are seeking a Director of Food Safety and Quality Assurance to direct and support the food safety and quality vision, strategy, and infrastructure programs. We are seeking someone who is Curious, Vibrant, Genuine, and of Service who can partner with internal and external stakeholders to deliver outstanding product quality, food safety, and sanitation.

What you will do:

 

  • Develops, implements, and oversees all food safety audit programs for all P.F. Chang’s suppliers, distributors, and restaurant locations.
  • Ensures compliance with all regulatory activities related to food safety and product quality. This is done through regular contact with restaurant leaders, restaurant and supplier visits, and clear communication to suppliers and all levels of the P.F. Chang’s organization.
  • Develops and maintains food ingredient specifications and ensure adherence to outlined specifications through periodic quality checks and supplier audits.
  • Leads, investigates, tracks, and resolves all product quality failure (PQF) complaints.
  • Collaborates closely with Culinary and Operations Teams to ensure new recipes, ingredients, and suppliers are safe and consistent in quality.
  • Oversees ingredient and recipe specification, nutritional and allergen information.
  • Partners with suppliers, Culinary, Supply Chain, and Operations Teams to enhance food product quality, cost, and labor efficiencies while assuring food safety.
  • Acts as SME on emerging food safety issues and food safety for P.F. Chang’s Crisis Team and leads foodborne illness investigations and product recalls.

Job Description

What we’re looking for:

  • Bachelor's degree in Food Science, Biology or related field. Master's degree a plus.
  • 10+ years food industry experience, preferably within a multi-unit restaurant organization.
  • Expert understanding of regulatory requirements within the food industry including GMP, HACCP, SSOP and all other pertinent USDA and FDA requirements.
  • Prior work experience in the Food industry, with a strong emphasis in Quality Assurance, restaurant food safety, HACCP compliance, and auditing skills.
  • Professional registration and involvement in industry focus groups are strongly preferred.
  • Strong problem solving capabilities including expert use of data analysis tools and techniques.
  • Ability to quickly provide sound solutions to food safety variety and quality problems, and concerns.
  • Ability to handle multiple priorities effectively through delegation and project management.


Physical Requirements:

  • Work is performed primarily in an office setting, and occasionally in a restaurant environment.
  • While performing the duties of this job, the employee is regularly required to stand, sit, demonstrate manual dexterity, climb stairs, talk, hear and see.
  • Must be able to travel moderately. Travel can be up to about 20% to supplier facilities, distribution centers, and other locations as business needs require.
  • Tolerate temperature extremes (hot and cold) in working in walk-in and around ovens and sinks and lift up 50-lb boxes.
