Job Summary: The Senior Meat Scientist independently leads the development of dried sausage products for CTI customers and its Liguria Brand. The candidate will be technically competent with a passion for innovation and developing high quality culinary inspired products. He/She will be responsible for the development and full commercialization of dried sausage products, including pepperoni and salami. Additionally, he/she will ultimately aid in expanding our dry sausage capabilities at our Humboldt, IA facility.

Duties and Essential Job Functions:

  • Works under the supervision of the Senior Director to develop assigned products.
  • Develops new products, improves existing products, optimizes processes, and reduces cost.
  • Designs products to meet customer expectations.
  • Responsible for the commercialization of products and ensure the smooth transition from bench to plant.
  • Master the commercialization process at CTI Foods. He/She will work collaboratively with cross-functional team members to successfully launch new products.
  • Accurately document formulations and methods for making bench top samples, as well as make samples when needed, during development process.
  • Assist in the development of process capable specifications (internal and external) with input from Production and Quality Assurance for new products and modified products.
  • Source ingredients, as needed for the development process. Coordinate with purchasing and ensure purchasing strategy is employed. Develop relationships with suppliers and leverage their resources when possible.
  • Perform nutritional analysis of prototypes using the nutritional program Genesis R&D.
  • Create draft ingredient statements and assess the presence of allergens and sensitive ingredients in formulations.
  • Work in a production environment where he/she will provide assistance in trouble-shooting plant related issues and provide technical insights to the Production Team.
  • Work closely with QA and Production to determine root cause of customer complaints, as well as, suggest corrective actions.
  • Works closely with CTI customers; presenting products and providing technical support.
  • Provide technical support to CTI Sales Team.
  • Responsible to ensure that all designated R&D areas are clean and organized.
  • Observe and comply with all food safety (GMP) and general safety guidelines.
  • Complete assigned work in a timely manner to meet project timelines.
  • Performs other related duties as assigned.

Preferred Qualifications:

  • Bachelor’s Degree in Food Science or related field of study with 5 to 7 years of experience OR
  • Advanced Degree in Food Science or related field of study with 2 to 5 years of experience
  • Expert level knowledge of meat systems – beef, pork, and poultry.
  • Competent knowledge of ingredient functionality especially as it pertains to meat curing and meat fermentation.
  • Keen understanding of processes and their impact on product performance - grinding, fat balancing, blending, stuffing, fermenting, drying, slicing, and packaging (MAP and non-MAP).
  • Knowledge of oven cook cycle development with an understanding of key points – fermentation, relative humidity, and end-point requirements for time and temp.
  • Familiarity with drying rooms and the factors that affect drying time and behavior, such as, dry and wet bulb temperatures, relative humidity, and balancing air flow.
