Job Summary

The Research and Development Director is responsible for the R&D function across the company, including the development, commercialization and reformulation of products. Working closely with the sales, operations and marketing teams this person conducts technical research and development to enable continuing innovation in product quality and cost. The R&D Director will be well versed in food science, technology and persuasive with customers and partners. He/she will lead with scientific rigor and incorporate the latest research and trends to develop and operationalize new tortilla products and best-in-class operating procedures.

Duties and Responsibilities

  • Effectively collaborate with revenue-generating customers, prospective clients and internal leaders to develop new products and reformulations.
  • Plan and implement customer tests in conjunction with other relevant stakeholders.
  • Design, monitor and document plant trials and initial plants runs.
  • Review critical data involving product and ingredient concerns and resolve issues to support company business objectives.
  • Develop and verify customer specifications including shelf life and handling procedures.
  • Provide cross-functional leadership and manage the Product Development process across the company.
  • Independently plan and execute experiments, including analyzing results and advocating recommendations for optimizing product performance.
  • Develop product sample prototypes that meet product concept parameters.
  • Coordinate sensory product evaluations of both Fresca products and competing products via end-user focus groups.
  • Conduct competitive product evaluations and maintain competitive product databases as required.
  • Oversee all aspects of label design, including compliance, validating nutritional assumptions, ingredient statements and food safety risks, allergen declarations, and generic labeling for all R&D test products.
  • Develop manufacturing specifications including submission of new or updated information to costing.
  • Collaborate with QA to ensure quality and safety standards are met during commercial expansion plan.
  • Build, maintain and achieve product development plans and timelines.
  • Lead evaluation of new suppliers and all associated ingredients.
  • Collaborate with purchasing and quality assurance to consolidate the use of existing raw materials to optimize costs.
  • Maintain accurate and complete records of lab work, documentation of product ingredients used and formulation modifications.
  • Integrate new insights from industry technologies, attend classes/seminars to improve technical skills and industry knowledge. Shares learning in cross-functional setting and applies learning to work assignments.
  • Oversee and manage company-wide R&D budget.

Minimum Required Qualifications:

  • B.S. Degree in Food Science and Technology, Chemistry or Biochemistry.
  • 5+ years of demonstrated experience in R&D, QA, food science, food safety and food chemistry.
  • Must have the ability to manage new and multiple projects from concept to commercialization.
  • Subject matter expert in food and ingredient science and food processing.
  • Strong knowledge of ingredient functionality/interactions.
  • Must have extensive baking experience.
  • Must have strong USDA, FDA, Kosher, Organic, Non-GMO, and Natural Products experience (including compliance with US and International Standards).
  • Solid knowledge of Food Safety and HACCP processes.
