Director of Food and Beverage for Delaware North's Sportservice Division - Buffalo, NY

The Director of Food & Beverage is responsible for providing support, leadership and oversight of the food & beverage strategies and activities for their assigned region within the Sportservice Division. They will assume a senior leadership position for all assigned Sportservice properties and will lead as a strategic partner to the divisions leadership team, implementing company Food & Beverage Standards and consistently striving to improve our offerings across our Sportservice properties nationwide.

 

This position is a business partner to the corporate and unit teams and helps achieve food & beverage goals by proactively researching markets, trends and the development of key programs and concepts. This leader instills the culture, mission, values and quality standards to ensure maximum potential is achieved across their region and the greater Sportservice portfolio. This person must create an exceptional climate of professional and personable service that ensures the engagement of employees, guests, clients and ownership. This leader will identify the development needs and opportunities of the management talent throughout their portfolio of accounts and leverage across the division.

 

This position reports directly to the Vice President of Food, Beverage & Hospitality for Sportservice.

 

Responsibilities

Develop and implement food & beverage strategy that aligns with organizational policies and goals.

Develop food and beverage concepts and programs throughout the Sportservice division meeting corporate, client, regulatory and other requirements.

Monitor and analyze assigned unit’s financial performance

Work with unit teams to develop realistic and attainable budgets and accurate forecasts for food and beverage operations.

Develop effective food preparation and cost management strategies, with emphasis on exceptional food quality and waste minimization

Develop menu and profitability models, creating market- specific programs that are competitive and manageable

Prepare, analyze and deliver food & beverage metrics and reports.

Act as a resource to Sportservice operators and leaders regarding issues and recommend changes when needed.

Review food & beverage aspects of annual budgets and business plans to ensure the smooth operation and achievement of metrics.

Assist with kitchen design and capital project implementation for new and existing facilities.

Visit units frequently to ensure food and beverage expectations are being met. This also includes adherence to safety and sanitation standards, corporate Chef Certifications. Establish corrective plans for action for any identified deficiencies and monitor compliance. Develop and implement programs to train team members in procedures and techniques for effective and safe food preparation and service

Work with Vice President of Food and Beverage as well as Business Development on all renewals and new business contracts with a focus on menu research & development, facility design, kitchen layout and equipment and small wares specs.

Participate in talent acquisition for key Sportservice unit leadership positions.

Establish food & Beverage requirements by studying organization plans and objective and researching various markets.

Communicate with regional and corporate leadership regarding issues, risk and liability concerns, or other important business matters.

Contribute to the strategic development and management of career paths and succession plans.

Maintain effective communication, giving direction, support, timely feedback and recognition of performance.

Create a positive environment in which all employees have the ability to maximize their potential.

Qualifications

10+ years of progressive food and beverage management experience. Must have senior level experience in back and front of the house operations in multi-unit, high-volume and corporate structure. Experience managing a portfolio of Sporting venues highly preferred.

Proven track record of health and safety excellence.

Experience supporting multiple business locations across the country preferred.

Must be a self-starter with an entrepreneurial spirit who is enthusiastic, energetic and personable.

Must possess strong communication and listening skills, excellent speaking, reading and writing.

Ability to effectively present information in one-on-one and large group situations to business partners and associates.

Working knowledge of various software applications including but not limited to Microsoft Office Suite and POS Systems.

Ability to effectively deal with internal and external customers and staff, some of whom will require high levels of patience, tact, and diplomacy.

Established assessment and decision-making skills with proven ability to build relationships and influence at all levels of the organization.

Excellent time management, organizational and follow-up skills. Ability to set priorities, organize time, demonstrate initiative and work independently.

Use logic to define problem, collect information, establish facts, draw valid conclusions, interpret information and deal with abstract variables for unique or unfamiliar situations.

High energy with effective and influential people skills. Positive attitude and the desire to motivate others.

Willing to travel 75%+ within North America
