Manager, Food Safety - Catering Operations


The Food Services department develops, creates and provides the great dining experiences on board our aircraft.

Job overview and responsibilities


The Manager Food Safety will lead the Food Safety and Quality Assurance program for the Denver Catering Manufacturing Facility. This role will develop, implement and maintain the site-specific food safety plan to ensure compliance with applicable regulatory requirements (FDA, USDA, CBP and DOD). The manager is responsible for implementing, enforcing and monitoring the Food Safety programs. This role is the designated Preventive Control Qualified Individual (PCQI) for the local kitchen operation.

  • Develop, implement and ensure compliance with the Denver Catering Plant Food Safety Plan
  • Analyze, implement, maintain, and update risk-based preventive controls, otherwise known as prerequisite programs, process steps, operational practices, and plant environment
  • Responsible for the local environmental monitoring program to ensure adequate controls are in place for the control of microbiological hazards
  • Own the Master Sanitation Schedule as part of the Food Safety Program
  • Coordinate and facilitate food safety audits and inspections as well as supplier audits
  • Drive investigations with a focus on root cause identification, working with the Catering Operations department on preventative actions for non-conformance
  • Support the development and delivery of training for compliance with food safety and quality requirements
  • Work closely with General Manager and kitchen process owners on any food safety or quality assurance issues



  • High School Diploma, GED or educational equivalent required
  • BS Degree in Microbiology, Food Science, Food Engineering or a related field required
  • Five or more years in Food safety and Quality Assurance within food production environment required
  • Knowledge of FDA/FSMA and USDA requirements for food production facilities required
  • Knowledge of food microbiology, food safety and food defense required
  • Knowledge of the FDA Retail Code required
  • Knowledge of product traceability and recall management required
  • Ability to read, write and speak English fluently is required
  • Ability to read, write and speak a second language is preferred
  • Experience with SQF, ServSafe, FSPCA, and FDA/USDA audits preferred


  • Strong oral and written communication skills with the ability to communicate clearly and effectively with personnel, customers, suppliers and other business contacts required
  • Must have excellent attention to detail skills
  • Strategic/Big Picture Thinking required
  • Must have the ability to work in harmony with frontline employees
  • Airline experience and knowledge of catering operations preferred


  • HAACP Certification required
  • PCQI Qualification required
  • SQF certified auditor preferred


  • Must be willing and able to travel domestically
  • Must be willing and able to work in a fast-paced continuous production environment across multiple shifts required
  • Must be legally authorized to work in the United States for any employer without sponsorship
  • Successful completion of interview required to meet job qualifications
  • Reliable, punctual attendance is an essential function of the position
