Primary Purpose:

To develop and incorporate seasonings and flavors into value added meat/poultry products by applying the scientific and technical knowledge of meat/poultry and their processes. Design and create new brines, marinades, and rubs. Take a lead role in customer presentations and solving our customerís technical problems.

Essential Functions/Responsibilities:

  • Formulate meat/poultry products, new or existing for presentation to customers based upon project specifications.
  • Stay abreast/educated on meat science and processing technology. Have knowledge of USDA and FDA regulations.
  • Able to develop quality retail meat products like sausages, deli meats, cured meats, smoked meats, etc. in the lab.
  • Have a through knowledge of functional ingredients. Identify new and replacement raw materials that can be used in the development of meat/poultry products.
  • Replicate products and flavors that already exist in the marketplace.
  • Demonstrated data entry and PC skills, including Excel, Word, and PowerPoint required.
  • Possesses advanced knowledge of our customer products and processes and apply this knowledge to the development of culinary ideas.
  • Maintain ongoing communications with customers, sales people and co-workers on projects.
  • Maintain laboratory equipment and ensure adequate supplies.
  • Conduct sensory evaluations of seasonings and food products.
  • Meet project requirements within specified due dates.
  • Maintains accurate and organized project records.
  • May execute projects or perform other duties as required by the Division.

Minimum Requirements :

Bachelors Degree in Food Technology or Meat Science

Minimum of 5 years experience in the meat/poultry processing industry. Seasoning / flavor experience is a plus.

Physical Requirements:

Must be able to taste and smell chemicals, flavors and food products. Must be able to stand for

long periods of time in a laboratory setting. Must be able to see to mix and compound flavors.

Working Environment :

Laboratory environment with exposure to a variety of food GRAS chemicals, flavors and food products.
