Cedar Fair, a leader in the amusement park industry, has an opening in Charlotte, NC for a Corporate Director, Food & Beverage - Safety and Sanitation. The Corporate F&B Sanitation and Safety Director will report to the Corporate VP, Food and Beverage and will work directly with each park with regard to the safe service of food and beverages. He/She will monitor internal and external auditing, review on site locations and practices and teach and train our operators as needed to enhance our ability to deliver positive results. Overall goal is to provide resources, tools, data and training to our operators in order to assist them in the efforts of building and maintaining a clean, safe environment where food and beverages are prepared and served.

]Responsibilities:

Manage park sanitation and safety supervisors and the internal and external auditing programs

Travel to parks and conduct audits and trainings as needed

Work with Corporate Chef to continually provide training and monitoring resources/tools to the field for use in development of manager and associate skill levels in safe service of food and beverage

Research food codes to ensure we are current in our practice of sanitation

Reporting, tracking and analysis of health department and internal and external auditor reports

Teach, train and develop park safety and sanitation associates and chefs as needed

Keep up with industry news and products that can assist in the safe service of food and beverage

Qualifications:

National Serv Safe Proctor Certified

Strong written and verbal communication skills

Strong computer skills, Excel, Word, Powerpoint

Strong analytical skills as well as the ability to create reports and present

Ability to teach and train associates and managers

Strong understanding of food service sanitation practices

Extensive knowledge of food codes

Extensive knowledge of food service sanitation and safety requirements

Position requires travel 40% of the time

Position requires mobility around the parks for extended periods

Role Purpose Statement

The job incumbent will oversee, develop, implement and evaluate the effectiveness of the Preventive Control Qualified Individual (PCQI) training according to the Food Safety Preventive Control Alliance customized for airline catering in NAM region. Strives to achieve excellence in service and operational compliance to regulatory and corporate policies.

Fostering food safety culture, digitalization and innovation to ensure accuracy and mitigate noncompliance.

 

Main Accountabilities 

Food Safety Preventive Controls (FDA/FSMA) 

Plan, organize, develop and lead training in Food food safety standards that are customary within the airline catering and mandated by government regulations FDA/USDA (including FSMA) and full compliance with customer’s specifications and corporate standards include the Hazard Analysis and Critical Control Points (HACCP). 

Gathering and exploring regulatory sources FDA/USDA to develop training materials and customize according to the target audience 

Provide the training and measure the effectives and appliance 

Attend professional events to keep the knowledge up to date and build network 

Maintain up-to-date knowledge of: o Food Safety Modernization Act (FSMA) Codex Alimentarius Standards, Corporate and Customer standards 

Development and manage the implementation of the food safety programs such as: cleaning, sanitation, environmental monitoring, allergen, supplier approval 

 

Quality and Compliance 

Provide technical expertise on all aspects of food safety related to regulatory compliance FDA/USDA (including FSMA) 

Maintain training and certification programs focused on FDA/USDA (including FSMA) to ensure the level of the people supports minimum requirements as well as the goals of the region 

Liaise with regulatory bodies to ensure compliance to regulations 

Design preventative systems to ensure compliance is monitored and assured 

Develop training programs for all levels to ensure basic standards and company requirements are part of basic practice 

Interface with Procurement, PSD, Infrastructure Engineering and LPS to drive build in food safety in all departments 

Measure the trainings delivered and evaluate the efficiency applied

 

Knowledge, Skills and Experience 

Bachelor’s degree in Food Science or Biology or equivalent knowledge required 

PCQI leader training certified and solid knowledge in airline catering 

Seven to ten years’ quality management experience required 

Expertise implementing Food Safety requirements in Airline Catering 

Experience in conducting external and internal audits and using those results to improve future performance 

Extensive knowledge of quality systems, KPI tracking systems, airline performance management systems and ability use data and trends from those to improve quality 

Proactive problem-solving and creative decision-making skills 

Ability to facilitate groups and communicate effectively at all levels in the organization 

Strong oral, written and interpersonal skill with analytical, organizational and planning expertise 

Strong knowledge of Microsoft Office and Windows-based computer applications 

May require up to 50% travel
