Catering Operations

The Catering Operations department develops and provides the great dining experiences on board our aircraft and ensuring the catering operation goes smoothly.

Job overview and responsibilities

The Manager Food Safety will lead the Food Safety & Quality Assurance program for the UA Catering Manufacturing Facilities. This role will develop, implement and maintain the site-specific food safety plan to ensure compliance with applicable regulatory requirements (FDA, USDA, CBP, IFSA, ITP and DOD). The Manager is responsible for implementing, monitoring and ensuring compliance to the Food Safety programs. This role is the designated Preventive Control Qualified Individual (PCQI) for the kitchen operation. This role is responsible to develop, implement and sustain the food safety management system. This position is also responsible for training and supervision of their direct and indirect reports, providing the oversight and resources required to ensure compliance with the established Food Safety Plan and FSMA.

  • Maintain the Catering facility Food Safety Plan and ensure that it is updated and kept current to meet FSMA requirements
  • Responsible for the local environmental monitoring program to ensure adequate controls are in place for the control of microbiological hazards through a seek and destroy philosophy
  • Own the Master Sanitation Schedule as part of the Food Safety Program
  • Lead third party and regualtory food safety audits and inspections
  • Conduct supplier audits to qualify new vendors as needed
  • Drive investigations with a focus on root cause identification, working with the Catering Operations cross functional team on all non-conformances and customer complaints
  • Drive continual improvement through implementation of innovative solutions utilizing technology
  • Support the development and delivery of training for compliance with food safety and quality requirements
  • Lead the HACCP team with monthly meetings to ensure that all changes impacting the food safety management system are thoroughly whetted prior to implementation
  • Work closely with General Manager and kitchen process owners to develop and implement FSMS
  • Mentor and lead direct and indirect reports to develop their knowledge and skills
  • Manage financial budget for the department
  • Ensure safety of employees and participate in Safety Action Team Meetings, conduct safety inspections as needed

Required

  • BS Degree in Microbiology, Food Science, Food engineering or a related field
  • HACCP Certification
  • PCQI Qualification
  • Knowledge of GFSI scheme
  • 5+ years in Food safety and Quality Assurance within fast paced food production environment
  • Knowledge of FDA/FSMA, and USDA requirements for food production facilities. Knowledge of food microbiology, food safety and food defense. Knowledge of the FDA Retail Code
  • Knowledge of product traceability and recall management. Knowledge of IFSA and ITP requirements
  • Strong oral and written communication skills with the ability to communicate clearly and effectively with personnel, customers, suppliers and other business contacts

  • CFS Certification

  • Lean Manufacturing
  • Previous experience with FSSC 22000 or GFSI scheme, ServSafe, FSPCA, and FDA/USDA audits
  • Knowledge of airline experience and catering operation
  • Advanced computer skills with food safety software programs
