About the Department
The NC Food Innovation Lab collaborates with the NC Plant
Science Initiative, the NC State University Plants for Human Health Institute
(PHHI), the Department of Food Bioprocessing and Nutrition Sciences, and
other outside agencies. NCFIL is located on the NC Research Campus in
Kannapolis, NC. The NC Research Campus was created to have all aspects of
human health and nutrition in one place complimented by multiple state and
private entries providing the academic and research resources.
Essential Job Duties
The primary purpose of this position is to oversee all
aspects of NCFIL food safety and compliance from receiving raw ingredients to
shipped product in the safest manner while instilling the idea of a Food
Safety culture among all employees. The position will be responsible for
planning and directing food safety policies, programs, and initiatives to
ensure compliance with local, state, and Federal agencies.
NCFIL currently has a Food Safety and Quality Management
plan in place, but this program must be regularly updated to reflect changes
occurring with the Food Safety Modernization Act and other state and federal
regulatory requirements. This position will be responsible for updating or
developing new processes that must be followed to be in
compliance. The position will work closely with the Executive Director
to establish a Food Safety culture in NCFIL, and ensure employees are
adhering to developed guidelines and processes.
The position will work closely with food product developers and pilot plant personnel
to ensure product specifications for food ingredients and finished food
products are followed or developed for items being manufactured by NCFIL in
our pilot plant. In some cases, customers will have supplied specifications
for physical, chemical, and microbiological aspects of the products we are
producing. In other cases, NCFIL is developing new products from ideation to
manufacturing that need these specifications developed. New product
specifications will stretch beyond our facility to customer manufacturing or
co-manufacturing facilities.
The position will work closely with individuals in our product development
laboratory and pilot plant responsible for sanitation. Procurement and
management of laboratory supplies as well as shared responsibility for
EH&S and safety regulation compliance are required. The position will
ensure all standards, processes, and practices established for the NCFIL
facility are being complied with as per regulations established by the Code
of Federal Regulations and the Food Safety Modernization Act. Develop and
implement standard operating practices for NCFIL in regard to working
environment sanitation.
The candidate will oversee and conduct microbiological testing for product
safety and shelf-life studies. They will also need to interface with NCFIL
customers to test food products microbiological or physically to establish
specifications or ensure specifications are in compliance.
Environmental testing of NCFIL environment to confirm efficacy of sanitation
and allergen practices and processes.
The position will routinely audit NCFIL practices and processes to ensure
full compliance with the established Food Safety and Quality Management plan.
It will also be responsible for training others on the team in regard to these
plans and how they can audit the NCFIL facility and assisting in the
mentorship of staff technicians with PI. . The
candidate should be able to become FSQA certified after training if not FSQA
certified from previous experience. It will also be responsible for
interfacing with regulatory officials when external audits occur, and then be
responsible to work with the NCFIL Executive Director to rectify identified
deficiencies from an audit.

Minimum Education and Experience
- Master’s degree or Bachelor’s degree and
at least three (3) years of experience in food science or closely
related field with considerable food safety experience.
- Experience in food safety and/or quality
programs.
Other Required Qualifications
- Strong written and oral English
communication skills with the ability to interpret data in a written
format and present to clients at times.
- Analytical chemistry skills as
appropriate for the characterization of plant or animal-derived
proteins, foods, and biological matrices are a must.
- Knowledge of FDA’s Food Safety
Modernization Act and Preventative Controls for Human Food (PCQI) are
essential.
- Demonstrated ability to work with food scientists
in setting processes and specifications for new or existing products as
they move from development to commercialization.
- Strong problem-solving skills with the
ability to apply clear logic to troubleshoot and resolve conflicts and
unexpected outcomes.
- Evidence of effective communication
skills, including the ability to present technical information to a
variety of audiences and assist in developing manuscripts, grant
proposals, and presentations.
- Demonstrated interpersonal and
relationship-building skills with both internal and external contacts

Preferred Qualifications
- 3-5 years experience
in food safety or quality
- 0-3 years of leading a food safety
program
- Certified Better Process Control School
and/or Acidified Foods Manufacturing School
- In-depth knowledge of requirements for
nutritional data and regulatory requirements from FDA and USDA as well
as state and local health and food safety code
- Previous experience with HACCP and cGMP
requirements
- 0-3 years of pilot plant working
experience
- 0-3 years of research and development
experience
- Knowledge in plant science, biochemistry,
food science and technology, and/or human nutrition is preferred
