Food Scientist – Product Research - San Francisco, CA
ROLE As a Food Scientist in Product Research you will be an important member of our R&D’s team and involved in the full spectrum of projects in new Food Product Development. Responsible for designing and conducting experiments directed to new food product formulations involving functional plant proteins. Conduct experiments related to product formulation, shelf-life testing, packaging tests and nutrition quality/labeling. May also scope manufacturing process for new food products and support scale-up and technology transfer to commercial manufacturing facility.
RESPONSIBILITIES Develops and refines product requirements and specifications including product features, product benefits and desired claims, storage and shelf-life requirements and desired product cost structure Develops and refine product formulations which satisfy product requirements Evaluate product formulations for functional and sensory attributes. Where necessary develops or adapts evaluation methods as appropriate for product matrix. Evaluates alternative raw material and ingredient sources and suppliers based upon performance, cost and quality criteria Defines production method and parameters in collaboration with Food Process Engineer and supports scale-up and technology transfer at pilot manufacturing or commercial contract manufacturers Develops periodic written summaries of experiments and project progress Conduct work in a safe manner, consistent with the lab safety and environmental stewardship guidelines Perform other laboratory duties as required to support R&D and corporate projects
ATTRIBUTES M.S. in Food Science or related discipline with 0 to 5 years of experience Strong knowledge of food science including ingredient functionality and interactions, health & nutrition, food manufacturing processes, microbiology and quality assurance Works independently, can conceive, design and execute experimental plans in support of product development objectives Good background in experimental design, data analyses and data interpretation Good teamwork and interpersonal skills
