Nueske’s Applewood Smoked Meats, Inc., is widely
known and honored by culinary experts and chefs for the superb quality and
rich, smoky flavor of our Applewood smoked bacon, ham, poultry, sausage,
and other premium quality specialty meats. We are also known as one of the
premier employers in the Central Wisconsin area and we are currently
seeking to add a Food Safety & Regulatory Manager to our team. This is
an opportunity to become a key player to support the artisan smoking
process that has made Nueske’s what it is today!
The Food Safety & Regulatory Manager will provide
leadership in overseeing food safety initiatives to provide brand
consistency and protection as well as ensure we meet or exceed all USDA,
BRC, and customer requirements.
Duties will include, but are not limited to:
- Manage and develop HACCP,
GMP, and SSOP programs, company policies & procedures, and
government regulations that contribute to food safety.
- Act as the Food Safety
liaison between USDA personnel and plant management.
- Implement corrective actions,
special projects, and microbiological validation studies to achieve
food safety objectives.
- Prepare and review plant
information including: Plant environmental microbiological trends, SSOP
trends, HACCP trends.
- Manage testing procedures for
finished products including chemical analysis and shelf life studies.
- Oversee and assist in working
relationships with third party laboratory.
- Develop and deliver food
safety training as needed.
- Keep abreast of technical and
regulatory developments as they relate to food safety, and disseminate

To successfully perform in this position we are
seeking an individual whose qualifications include:
- Bachelor of Science degree in
the Animal/Meat Science, Food Science, or a related science field.
- A minimum of three to five
years of previous managerial experience in Food Safety or Quality
Assurance fields in a meat processing plant where they would have
obtained a solid understanding of SSOP, GMP, and HACCP programs as
well as Food Safety, Food Microbiology, and Plant Sanitation
