Position Summary:

The Quality Assurance-Quality Control Technician is responsible for daily implementation of Food Safety and Quality Assurance Programs at Buckhead Beef.

 

Responsibilities:

 

Essential Duties and Responsibilities:

  • Performs HACCP Monitoring activities in the Raw Not Ground and process categories daily during the first shift.
  • Keep a good working relationship with USDA to ensure plant is performing in a proper manner.
  • Performs the Operation Sanitation Audit.
  • Ensures that GMPís are followed by all production and support employees.
  • Application and follow thorough of QA Hold Tags to correct deficiencies throughout the day.
  • Check knives and scales for cleanliness and proper repair.
  • Maintenance of Reconditioning Table and ensure follow through of procedure.
  • Check temperatures on incoming products.
  • Help ensure sanitation is maintaining a clean working environment.
  • Oversees all Laboratory tests and procedures and participates in quarterly AOAC Proficiency Testing.
  • Performs on-line QA audits at applicable times to ensure that customer specifications are met.

o    Raw Material Dates

o    Steak Audits (as many as possible)

o    Packaging Audits (hourly)

o    Metal Detection (hourly)

o    Fat Analysis and Patty Weights on Ground Beef (every batch)

o    Pull Ground Beef Samples for Micro Tests (as needed)

o    Net Weight (as many as possible)

o    Tare Weight

Qualifications:


Must have a working knowledge of USDA/FSIS Rules and Regulations to include HACCP, SSOPís. Capable of completing other duties assigned as needed and ability to adjust schedule as needed. HACCP Certification.

Education and Experience: High School or GED.

Language Skills: Must have good written and verbal communication skills and be able to effectively communicate with others.

Mathematical Skills: Basic math skills are a must.

Physical Requirements: Physically fit and able to work on feet all day. Standing, stooping and climbing are regular activities for this employee. Employee must have the ability to negotiate throughout the production and warehouse areas unassisted without disrupting regular production and warehousing activities. Normal levels of eyesight and hearing after correction. Color vision is required. The ability to touch, feel, manipulate fingers and limbs to operate various processing and material handling equipment is necessary. The ability to smell is required, in order to detect levels of wholesomeness and spoilage.

This position requires the candidate to be in refrigerated processing and warehouse areas. These areas are cold and wet and exposure to moving machinery and sharp surfaces are a regular occurrence. This is a high noise area.
