Job Description

Perform bakery related research and development projects in experimental laboratories and pilot plant production facilities.

Principal Responsibilities:
Conduct highly controlled baking and laboratory testing as outlined in the form of project proposals, including project set up, execution, data collection and reporting of results.
Perform tasks related to research and development of bakery products to meet specific client requirements (nutritional, appearance, flavor, texture, processing).
Consistently perform technical research activities, including repetitive tasks, with accuracy and attention to detail. 
Work independently on projects as assigned while closely following the methodology as outlined.
Trouble shoot complex technical baking inquiries using scientific approach. 
Interact with clients to explain and establish project protocols prior to project testing.
Provide lab preparation and clean up consistently and in detail oriented manner.
Support pilot plant groups periodically and as assigned.
Effectively communicate with clients and visitors.
Work cooperatively with internal resources to accomplish work within outlined schedule.
Maintain lab equipment and facilities, taking inventory as needed and clean after lab activities.
Comply with safety protocols and communicate procedures to visitors in the lab. 

Principal Customers:
AIB International clients (baking industry, milling industry, ingredient suppliers), seminar students, and AIB International staff.

Qualifications:
Education – Post-Secondary degree in Food Science or related field or AIB Baking Science & Technology graduate preferred.
Work Experience - Previous baking and/or laboratory experience preferred. Knowledge of ingredient functionality, product formulations, and product optimization highly preferred.
Skills - Excellent communication skills –oral and written.  Detail oriented and self-motivated. Ability to work with little supervision. Some flexibility in work hours required. Proficient in Microsoft Office software.

Conduct themselves in a professional manner at all times.
Carry out all assignments and follow all written and verbal instructions from supervisor in a timely manner.
Maintain all safety rules and SOPs in accordance with company and external regulatory policies.
