Description of Work

The position’s task is to maintain and expand research and teaching efforts in food protein chemistry within the Department of Food Science and Technology.
The incumbent will develop a high impact research program that is recognized nationally and internationally in the area of food protein chemistry. This will include basic and applied research on proteins from food sources important to the agricultural economy of the state of Nebraska, and may include beef, swine, poultry meat and eggs, dairy, soy, corn, wheat and/or dry edible beans. Research may include basic studies on the biochemical structures and properties that affect the nutritional and functional qualities of food proteins, and on means for modifying those proteins to enhance their quality. Additional research may include investigating the effects of food processing technologies on the nutritional characteristics of proteins, purification of proteins from novel sources, the modification and utilization of protein by-products from processing operations, protein extraction optimization from traditional and novel sources and development of analytical methods for detecting specific proteins in foods. The incumbent will be encouraged to develop collaborations with university researchers working in areas such as food allergies, gut health, meat science and field crop genetics. Research results are to be published in refereed journals and other scholarly publications, and presented at regional, national and international scientific meetings. Seeking and securing federal and industry grant support is expected.
The incumbent will be expected to average 40%
FTE in teaching, as determined by the CASNR Academic Appointment Guidelines. Instruction in the areas of Protein Chemistry, Food Chemistry, Sensory Evaluation and/or Food Analysis at the undergraduate and graduate levels, by both traditional and distance formats is required. Participation in short courses, workshops and training programs organized by The Food Processing Center is expected. The incumbent will also participate in the Department’s undergraduate student recruitment, advising and retention activities. Advising and mentoring of graduate students and service on supervisory committees is also expected. Expectations for this position also include supporting the IANR Science Literacy initiative and the incumbent’s engagement in the scholarship of teaching and learning.

Minimum Required Qualifications

A PhD or equivalent in Food Chemistry, Protein Chemistry, Biochemistry or a closely related area is required (earned PhD in place by date of employment).

Preferred Qualifications

Post-doctoral research and teaching experience or industrial experience is desirable.
