This position will work closely with their Senior Supervisor and other Lab Technologist on routine tasks for the innovative concept development of powder, bar, ready-to-drink (and other format) products. Successful applicants should have an associate's degree or higher, be well organized and detail oriented, and will be expected to follow good manufacturing practices in a lab environment.

Note: This is a lab position where all food allergens (milk, soy, nuts, peanuts, wheat, egg, etc…) are present. This person will be involved in tasting a variety of products and subsequently exposed to them.

Required Skills

Laboratory

 

  • Perform and assist with laboratory equipment calibration and maintenance
  • Assist with physical inventory of laboratory raw materials
  • Prepare new product bench samples for sensory evaluation .i.e. capsules, liquids, or powders
  • Homogenous blending of powders utilizing V-blender
  • Assist with Encapsulation of powders into capsules via manual capsule press
  • Flavoring of powders for ideation and innovative concept trials
  • Assist with Maintain training for the Biohazard Program Documentation
  • Log objectives and detailed results of lab experiments in notebooks or files as necessary.
  • Assist with Conduct repetitive tests needed for packaging selection.
  • Maintain finished product folders for all new products.

 

Documentation

 

  • Organize and track R&D laboratory raw material samples, reagents, certificates of analyses, specifications and MSDS
  • Maintain and track electronic spreadsheet and paper log of laboratory raw material inventory
  • Assist with the maintaining and tracking electronic spreadsheet and paper log of innovative concept trial results
  • Create, maintain, and update finished product specifications and master formula cards
  • Create initial formula card, base for flavoring, and cost sheet for preliminary concept formulas

 

Sensory Evaluation

 

  • Conduct sensory evaluations (taste testing) of raw materials and finished product bench and pilot samples
  • Prepare new product bench samples for sensory evaluation .i.e. capsules, liquids, or powders

 

Testing

  • Perform organoleptic and various analytical testing of ingredients and final product
  • Maintain and track electronic spreadsheet and paper log of analytical results for raw materials and finished products
  • Assist with the maintaining and tracking electronic spreadsheet and paper log of innovative concept trial results
  • Perform innovative concept testing measurements consisting body composition via BIA scale, blood pressure, blood glucose, body temperature, Hand Grip Strength via Dynamometer

Blue Sky/Concept Development

  • Assist with all stages of innovation including, product conceptualization, raw material identification, claim substantiation, formulation, economic feasibility, innovative concept testing preparation, reformulation, and dosing
  • Perform market evaluations/searches for concept development comparison
  • Create initial formula card and cost sheet for preliminary concept formulas
  • Create preliminary Nutrition/Supplement Fact panels for new concept Panel Review.
  • Use scientific papers to create Ingredient Summaries for ingredient dosing, regulatory status, upper limits, contraindications, and claim substantiation.
  • Attend Ingredient, Packaging, Dosage form and Delivery System webinars, seminars, and trade shows.
  • Assist with discovery and rediscovery of ingredients in addition to the creation of novel combinations of dietary ingredients i.e. new salts, esters, and ethers etc.

Intellectual Property

  • Complete Intellectual Property (patent) searches and Freedom to Operate requests to be submitted to the Legal department.

Requirements

Required Experience
Highly preferred Associates or Bachelor's degree in Food Science, Nutrition an applicable discipline.
Years of experience: 3-5 plus years food laboratory experience preferred
Specialized training in: basic lab/food lab functions
Knowledge of the position
Math Aptitude
Understands daily lab processes
Skills of the position
Proficient in Microsoft Office (Word, Excel, Outlook)
Detail oriented, well organized
Strong analytical skills
