About the Company
TMI began in a 3,000 ft² noodle factory in New York's Chinatown district in
1989 with the mission of creating fresher and better tasting noodles.
Within 3 years the company expanded to a 22,000 ft² facility in Brooklyn
and eventually added dumplings and other Asian specialties to their product
mix. In 2001, TMI Trading was added under the TMI umbrella with the
commitment of sharing quality specialty foods from Asian countries such as
China, Indonesia, Malaysia, Taiwan, Korea, and Singapore, in the US market,
and transforming them into household staples.
Today, TMI employs over 300 people and
occupies more than 200,000 ft² in Brooklyn. It is comprised of the brands
Twin Marquis, Chef One, and Tang's Natural, each specializing in its own
category of goods. Twin Marquis and Chef One are both successful and highly
influential brands in the US East Coast Asian food markets, with Twin
Marquis specializing in noodles and dumpling wrappers, and Chef One famous
for its dumplings. TMI's commitment to fresh, delicious ingredients and
innovative product development has made them New York's leading Asian food
- This R&D Food
Technologist position is responsible for supporting the development of
new products which are in line with the Company’s mission for the U.S.
mainstream market, and the continuous improvement of the Company’s
existing products to meet market demands.
- Work in conjunction with
Researcher to develop innovative concepts and recipes.
- Develop products from
concepts formed at ideation sessions and execute projects according to
business plans and timelines.
- Improve current products with
regard to both cost and quality.
- Source new ingredients during
the product development process and build vendor relationships.
- Prepare bench top prototypes
and analysis using a variety of methods available in the R&D test
- Prepare product
specifications, set-up formulas and write technical reports and test
- Perform consumer sensory
testing and shelf-life studies for pre-launch products.
- Monitor current market trends
via trade journals and competitor market trips to predict future
focus, and submit creative ideas.
- Ensure strict compliance with
food hygiene and safety procedures, as well as food safety
- Maintain a clean and
organized R&D test kitchen.
- Independently conduct plant
trials at various production facilities.
- Graduate Degree in Food
Science with a minimum 2 years of direct experience as Food Technologist.
- R&D experience working in
the Food Manufacturing & Distribution Industry is a plus.
- Culinary background and/or
any form of processed meat such as chilled or frozen cooked meat
development experience are strongly preferred.
- Great work ethic with a
positive, can-do attitude.
- Excellent interpersonal and
teamwork skills and ability to work cross-functionally with
individuals and teams.
- Excellent communication
skills, strong analytical and problem-solving skills.
- Must be detail-oriented,
meticulous and knowledgeable with regard to food hygiene and safety.
- Proficient in Microsoft
Office Suite, particularly Word, Excel, and PowerPoint.
- Bilingual in English/Chinese
or English/Korean are strongly preferred.
- Love for Asian food a plus.
