Dr. Peter Bodnaruk
is Director of Microbiology and Analytical Chemistry with Ecolab Inc.
He has over 15 years experience in food safety having held food safety
positions in the US meat industry and food research appointments in Australia
and Great Britain.
He has worked as a public health microbiologist with the state health
department in Sydney, Australia investigating food borne illness incidents.
He also spent time working on the development of rapid detection methods
for pathogens at Leatherhead Food Research Association in Britain.
He has extensive experience in risk management and risk mitigation strategies
for ready-to-eat meat products, working with food safety and HACCP teams
in meat processing plants both in the US and Australia. He received his
bachelor's degree in microbiology from Univ. of New England, Australia,
and went on to receive his master's in microbiology from Curtin University
of Technology and doctorate in food science from the University of Tennessee
(Knoxville). He is a member of the editorial board of the International
Journal of Food Microbiology and has recently joined the editorial board
of the Journal of Food Protection.
