Food Scientist - Caldwell,

This role works under the direction of the Director Food Science
and collaborates with Agronomists, Regulatory and other Food Scientists to
test new potato varieties for use in fresh, refrigerated, frozen, chips,
French fries, formed, and dehydrated products. They will assist in designing
new foods from conception through introduction in the market place. This
includes developing early prototypes, developing processes, pilot plant
scale-up and implementation at the plant level. Collaborates with the other
divisions including food processing, food safety, quality assurance,
regulatory, sensory, potato variety development, engineering, and culinary
sciences. Performs work assigned by others and assigns work to others.
Technical leadership of assigned projects. Provides time / resource estimates
for assigned projects. May develop solutions to complex market development
- Assist in developing new potato products,
optimize processes, and work with Senior Food Scientists, Director Food
Science, the Director Strategy Business Development and the New Markets
Director to obtain capability for processing through Simplot facilities,
outsourcing, or developing new capacity as needed.
- Manage projects assigned by the Director
Food Scientist in product development efforts from concept initiation
through product launch. Takes leadership in establishing quality
specifications, nutritional labeling, plant start-ups, and defining
tests needed to assure product quality and safety.
- Supervise control and disposal of
regulated raw plant materials to ensure that all USDA regulatory
requirements are adhered to including product containment, obtaining
permits, completing tracking records, training personnel in procedures,
and any noncompliance reporting.
- Along with the Agronomists and Food
Scientists, organize and complete testing of new Plant Sciences
varieties as needed for the fresh, refrigerated, french
fry, formed, chip, dehydrated or other markets.
- Design experiments, complete statistical
analysis, summarize and interpret data, develop product specifications
and communicate results.
- Manage personnel, equipment and resources
needed to support Plant Sciences in the development of food products.
- Work with other divisions within Simplot
as needed to accomplish overall company objectives.
- Assist in other areas as needed.
- Bachelor's Degree (B.A. or B.S.) from 4 year college or university
- 3-5 years related experience and/or
- Excellent written and oral communication
- Food chemistry, potato growing practices,
ingredient functionality, project management, food processing, good
manufacturing practices, quality systems, sensory analysis, statistics,
experimental design, basic computer skills, food science and food
