Job Responsibilities
• Trains & Assists Culinary and Stewarding dept. to achieve green level
ratings in the Company bi-annual Sanitation inspection by doing
weekly walk-through’s, Training, Documenting progress, and reviewing
out all of the areas that need improvement weekly.
• Puts together action steps as required to assist areas where there are
opportunities and tasks that are not being accomplished. Such as Temperature
Logs, Cool down logs, Labeling and dating, Fifo,
Thermometer calibration, Improper sanitizer strength and anything pertinent
to sanitation levels being at a green Level
• Does weekly walk-through’s in all kitchen areas weekly, and reports out any
health violations, safety hazards or equipment repairs
• Assists in periodic special projects for Executive Chef, such as annualized
asset inventory, Quarterly China, Glass and Silver Inventory, Training and
Development of depth employees,
• Assists in all Local and State Health inspection walk-through’s and assists
in any special projects as it relates to Health Inspections
• Assists Executive Steward and Executive Sous Chef with Safety committee, by
setting up Safety meetings, maintaining all safety committee Logs and LPC
Logs and reports Maintains. Assists in all reports out any and all accidents
or safety and sanitation as it relates to the Core Signatures of Levy
Restaurants
• Maintains a high level of Visibility within the dept. and is pro-active on
Issues that may arise.
• Comply with health department standards, upholding these regulations at all
times. Does weekly walk-throughs with Stewarding, Supervisors and Chefs that
is documented and Shared with management.
• Develops a positive approach method/Solution for any and all issues
relating to safety, sanitation or Asset protection.
• Does weekly walk through of all restaurant/Concessions based on opening
creates plan for the week based off of the Facility Guides for Restaurant
services. Reports out the plan to Executive Chef, Executive Sous Chef.
• Assists in Daily Dept. Stand up meetings as to the Opportunity of the day
as it relates to sanitation and preventative maintenance of Sanitation in the
work place.

Education: High school diploma,
GED, or accredited culinary school background Preferred, not required
Experience: Minimum Culinary or Food service
degree or a Baccalaureate degree in Food Science.
Licenses/Certifications: Serve Safe
