Brief Description
Purpose of Position:
To innovate, recommend, plan, manage and implement the new and
improved ice cream products and processes resulting in the delivery of
World Class Ice Cream products to our franchisees and our guests. Build and
develop partner relationships that deliver the highest quality products,
meeting our marketing goals while supporting the financial objectives of
Dunkin Brands.
Detailed Description
Day
to Day Accountabilities:
• Recognized
product expert within the company for global ice cream formulation
development, dairy based systems, and novelties.
• Develop and
maintain relevant dairy/beverage technical expertise for self and other
team members.
• Responsible
for recommending, planning and managing the development of new and improved
ice cream and beverage products and processes.
• Leads research
and planning of new technology by identifying new ingredients and process
technology.
• Follow and
analyze trends/competitive landscape to initiate creation of new ice cream
and beverage concepts
• Strong link
and technical communicator with our joint venture partners in Japan and
Korea.
• Writes Product
Development plans, and collaborates with category teams providing input to
strategy to ensure project is aligned with brand initiatives.
• Composes
product specifications and performance specifications.
• Create bench
top gold standard prototypes for sampling/sell-in events and photo shoots.
• Represent Dunkin’
Brands strategies and brands by creating effective business relationships
with cross-functional team members, manufacturers, and Franchisees.
Project
Accountabilities:
Project Team Member
1. Participate in
the initiation and planning phases by gathering project data and
requirements and providing input on project activities and timing.
2. Utilize project
management tools and disciplines to complete project assignments and meet
deadlines.
3. Help identify
and resolve project–related risks and issues.
4. Participate in
the evaluation of the project by giving input for post-project evaluations
and lessons learned.
Project Manager
1. Primary
responsibility for the planning, execution and evaluation of the project.
2. Select, direct
and provide coaching and feedback to the project team.
3. Monitor and
report project status to the team, sponsors and leadership.
4. Utilize project
management tools and disciplines to execute project processes, including:
risk management, issues resolution, change management, quality assurance,
and document management.
5. Ensure project
deliverables are completed, with quality, in a timely manner.
6. Lead project
evaluation and close.
Project Sponsor
1. Build and gain
support for business case. Ensure project is aligned with short term and
long term organizational strategy.
2. Select, direct
and provide coaching and feedback to the project manager.
3. Review and
approve plans, budget, resources, and timeline.
4. Ensure the
identification and resolution of project related issues and barriers.
5. Approve final
deliverables, and lead project evaluation and close.
Job Requirements
Education/Experience:
• Bachelor’s
Degree in Food Science and/or degree/background in Culinary
• Minimum 5-10 years
of experience in ice cream development - benchtop to full-scale
commercialization
• Knowledge of
ingredient functionality, chemistry, processing and manufacturing
• Knowledge of
sensory and consumer research methodology
• Familiarity
with regulatory compliancy
• Ability to
solve problems in area of expertise
• Ability to
communicate clearly and concisely, both orally and in writing with all
levels of management
• Excellent time
management and project management skills
• Experience in
the QSR industry a plus
• Strong ability
working with cross-functional teams

Additional Details
Physical Demands/Working
Conditions:
• Frequent
lifting of ice cream ingredients; daily lifting and moving of 5 gallon
pails of ice cream mix
• Daily leg, arm,
and hand/finger actions in performing bench top work (i.e. ice cream
production).
• Extended
periods of standing to perform some job parts; stamina/good footwear
required.
• Occasional
irregular work hours; night production work may be required.
• Daily use of
computer; close visual work
• Temperature
extremes: Inventory management and
shipping/receiving in walk-in Freezers.
• Extended
hours: Long hours and overnights required
for some preparation and/or events. Some production
require 12 hour shifts.

Allergies: Exposure to all
known allergies within the work area
• Chemicals: Use
of cleaning chemicals for food sanitation
• Travel: Domestic and International air travel
required. Approximately 10-15% global travel will be required in support of
this positions responsibilities.
