Quality Assurance/Food Safety
Specialist - Odessa/Midland, TX
Immediate Opening:
The Bobby Cox Companies, Inc. has an immediate opening for a Quality
Assurance/Food Safety Specialist at its USDA meat facility and laboratories
located in Odessa/Midland, Texas.
Position will report to the Director of Quality Assurance and R&D.
In addition to the meat facility, qualified candidate will provide expertise
to three well-established and successful restaurant brands Rosas
Cafι, Taco Villa
and Texas Burger. This is a unique opportunity for the right person to make a
significant impact on the QA system and move our brands to a new level.

Qualifications:
BS Degree in Food Science, Meat Science, Biology,
Nutrition, Environmental Health Specialist or other
science required preferred
Serve-Safe Certified preferred with trainer certification
eligible or in process preferred
Experience in Food Manufacturing and Sanitation preferred
1 plus years in Quality Assurance preferred, Supervision
experience greatly preferred.
Basic Understanding of HACCP, GMP, Microbiology/Lab
Practices, and Pest Control required
Bi-lingual Spanish/English preferred
Key Performance Elements/Essential
Functions:
The QA position will be involved in all aspects of the
meat plant and restaurants. Position will be responsible for building our QA
system to maintain a high level of quality.
Thoroughly inspect production processes daily for
adherence to GMP guidelines, and company product specifications and
standards.
Perform daily routine chemical and microbiological tests
Inspect, audit, and approve supplier facilities and
systems including manufacturing, storage and distribution sites and equipment
for assigned products.
Based on inspections, outrun reports, monitoring and
other materials, identify and/or make recommendations for continuation or
change in supplier programs to ensure continued improvement and approval
status for assigned suppliers and products
Design, implement, and manage product assessment process
for assigned products to ensure that all products are routinely assessed for
physical, chemical, organoleptic and/or
microbiological analyses per specified parameters and frequencies
Ensure that key suppliers and distributors have annual
third party sanitation audits, recall programs, and all relevant food safety
and product quality programs
Ensure all products, procedures, equipment and/or
suppliers meet appropriate food safety and quality criteria
Development and documentation of comprehensive
specifications for assigned products
Develop suitable evaluation parameters and criteria for
assigned products
Coordinate, and help resolve product related problems
with supplier, distributor, and restaurants while maintaining favorable
relationships driven to improving quality standards
Participate in programs with FDA, USDA, state and local Health Departments
to allow brands to better meet regulatory food safety requirements
Strong foodservice background, preferably with multiple
brands
Ability to make clear, concise and convincing business
presentations that will have high level impact with executive and senior
level management
General understanding of QA budgeting and cost control
functions, with ability to perform complex budgeting/cost control processes
Excellent verbal and written communication skills including
technical writing
Excellent people skills, and strong organizational skills
Ability to make appropriate business judgment and recommendations
independent of supervisor
Basic ability to work through problems without input from
supervisor
Working knowledge of Microsoft based software including but
not limited to Excel, Word, etc
