Summary Information
|
Position Description:
|
Assist Professor Chang in
the preparation of research proposals, designing, and conducting research
experiments in the characterization of legumes as related to value-added
end uses. To characterize the biochemical, physical, and processing
properties, food quality traits, and health-promoting properties of foods
made from soybean, common beans, and cool season food legumes as affected
by cultivar, processing, and storage. To develop new legume food products
and processing methods for food quality evaluation of the legume crops.
Record data, analyze data statistically, and prepare project reports and
manuscripts. Assist Professor Chang in supervising student assistants in
the laboratory and maintaining laboratory supplies, equipment, facilities
and safety, and temporary assignments to keep up his research program.

Minimum Qualifications:
|
- MS degree in food science or
closely related area.
- Strong interest and
commitment in research.
- Legume/food research
experience with publications.
- Experience in food analysis
including GC, HPLC, Instron,
electrophoresis, sensory methods, enzyme assays, and proximate
chemical analysis.
- Experience in statistical
methods.
- Ability to work effectively
and harmoniously with a group of scientists and students from diverse
cultural backgrounds.
- Effective written and verbal
communication skills.
- Knowledge of traditional and
international soybean food products.

Preferred Qualifications:
|
- PhD degree in food science or
closely related field.
- Experience in phytochemical
extraction and characterization research, use of cellular and
molecular and/or animal methods.
- Quality peer-reviewed
scientific publications in legume research.
- Experience in traditional soy
food processing.
