Food Safety – Quality Assurance: Summer Internship
John Morrell & Co. is looking for a qualified individual to assist our Quality
Assurance and Food Safety team. This is a full-time summer internship
position with potential for the selected individual to advance into a
permanent full-time role after completing their degree.
Responsibilities include:
- Collect data-lethality and
stabilization profiles on all cooking systems; Bldg. 116, Fl. 8, Fl. 6
& 40, Fl. 4 & 85, and the Julian system. Data will be collected
by using Data Trace probes. Analyze data against the established cook
schedule, and appropriate cooling schedule.
- Down load the information from
the probes into Excel spread sheets to show internal and ambient air
temperatures of the cooking and chilling profiles. The Excel spread
sheets will show the full cycle, cook cycle, narrow cook, lethality,
chill, diagram, and raw data.
- Maintain and organize the data
by HACCP Plan for the HACCP supporting elements.
- Assist in communicating
findings to appropriate plant personnel both production and mechanical.
- Coordinate probing times with
plant personnel.
- Assist in other data probing
projects deemed necessary like investigating room temperature variations
using I- Buttons temp recorders; plotting production
dwell times.
Required Skills
Requirements:
Working
toward a Bachelor’s Degree in Agriculture, Meat Science, Animal Science or a
similar area of study is required for this position.
Knowledge,
Skills and Abilities:
- Computer literacy including:
all aspects of Microsoft Office, especially Excel.
- Ability to work independently
with minimal supervision.
- Excellent verbal and written
communication skills.
- Ability to multi-task,
prioritize daily work assignments and manage time wisely.
- Strong organizational skills
and attention to detail.
- Ability to maintain
confidentiality and respond appropriately to sensitive situations and/or
information.
- Exceptional interpersonal
skills including the ability to work well with a diverse workforce.
