FOOD SCIENTIST

 

Under the direction of the Manger of Quality Assurance, this individual will assist with daily quality assurance and quality control activities.

 

RESPONSIBILITIES:

 

·         Commercialize new products by working with R&D and suppliers on ramp up of new products which includes specification and processing development. New item development includes, but is not limited to, specifications, labels, nutrition, microbiological testing, formulas, and shelf life. Ensure all new products are acceptable (food safety and food quality) for testing and/or launch. Develop and execute audit plans during ramp up of new products.

 

·         Develop and execute audit plans on Applebee’s and IHOP products. Analyze and communicate data with suppliers and work towards continuous improvement as needed. Work with suppliers on compliance to all specifications. Travel to facilities to monitor production and work through any issues that may arise. Conduct process audits and hold supplier reviews as needed. Work with R&D and purchasing as needed on alternate source projects aimed at ensuring continuity of supply. Provide direction to temporary/ part time employee(s) to assist with product monitoring. Assist with product quality complaints, including communication and corrective action follow up with suppliers.

 

·         Provide support on projects as required under direction of Manager/Director to ensure food safety, improve food quality, optimize products or align products

 

·         Write specifications, develop audit templates, and prepare formulations. Maintain database of supplier information, audit information, specifications and formulations as required

 

·         Maintain QA supplies, samples and equipment. Manage products for QA evaluations, Culinary Review, and Alternate Sourcing projects. Accept sample delivery

 

·         Leads activities related to Culinary Review, Food Shows, Blackboard specials/Form 100s. Manages activities associated with Culinary Review of products, including communication with suppliers to discuss results of the Culinary Review and distribution of notes to internal teams 

 

·         Manage Specification Book and notify Operations of product changes. Responsible for weekly Triad Meeting – organization and communication to internal clients related to meeting. Attend kitchen meetings/discussion and other inter-departmental meetings. Manage alternate sourcing projects as directed by Manager/ Director, including completion of cut sheets, preparation of specifications, and communication to internal clients of approval/disapproval of products. Support maintenance of data base of supplier information, audit information, specifications and formulations as required. Provide support on projects as required under the direction of the Manager/ Director to ensure food safety or improve quality

Job Requirements :

QUALIFICATIONS:

·         Bachelor’s degree in Food Science or related field.

·         1-3 years of restaurant/food industry QA experience in manufacturing, QSR or CDR concepts

·         Working knowledge of quality systems – GMPs, HACCP, auditing and specification writing.

·         Strong computer skills: Microsoft Office. Ability to multi-task with good organizational skills.

·         Excellent written and oral communication skills.

·         Travel required (30%).

·         Ability to lift 50 lbs.
