Position: Food Scientist
Department:
Research & Culinary Innovation

Reports to: Research & Product Improvement Manager
Hours: Full Time
FLSA: Exempt

Objective: To provide scientific food knowledge to the development process in the Research and Development Department.

Duties and Responsibilities:

∑ Work with the R&D team to develop formulations for new product development. Explore quality improvements and cost reductions to current product formulations.

∑ Assist in defining research procedures and experiment guidelines to drive effective development.

∑ Coordinate multiple concurrent food product launches from bench top testing to production commercialization.

∑ Cook and evaluate R&D samples and current products.

∑ Stay current on new food flavor trends for food service, club and retail channels.

∑ Assist with the ideation of new products through market research and product surveys.

∑ Assist in sourcing new ingredients, suppliers and distribute info to QA, Purchasing.

∑ Provide new product specifications to QA and Purchasing.

∑ Operate R&D equipment.

∑ Assist in the research and develop of formulations, machinery requirements, ingredients, and manufacturing processes for new products.

∑ Assist production in new product start up.

∑ Provide technical support services to sales team across all channels of business.

∑ Assist in establishing a sensory development training program and standardization of product sensory parameters.

∑ Assist in sourcing out QA equipment and establishing standards for all products; i.e. Salt, Moisture analyzer, Brix, Viscosity/Botswick, Acidity and accelerated storage cabinets.

∑ Organize ingredient inventory and request the necessary ingredients for research projects.

∑ Produce and inventory buyer samples and ship to sales accounts.

∑ Fluent in Genesis software to provide nutritional, ingredient statements

∑ Maintain department site in Share Point.

∑ Complete department reports.

General Production Duties:

∑ Follow company safety policy and the company policies of HACCP and SOPs.

∑ Follow personal hygiene & be familiar with current good manufacturing practices (CGMPs).

∑ Provide support to other areas of production as needed.

Computer Systems:

∑ MS Office Suite

∑ Share Point

∑ Genesis R&D

Education, training and work experience required:

∑ Bachelorís Degree in Food Science and at least 1 year related experience including product development and manufacturing.

∑ Experience working in a QC lab to test product attributes (salt, moisture, pH, etc.)

∑ Experience in microbiological testing procedures

∑ Problem solving skills, and analytical skills

∑ Outstanding organizational skills, with a strong attention to detail

∑ Ability to prioritize projects accordingly and multi-task.

∑ Mathematical Skills; ability to add, subtract, multiply and divide in all units of measure. Ability to compute rate, ratio and percent and interpret.

∑ Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

∑ Ability to interpret a variety of instructions furnished in written, oral, diagram or schedule form.
