Position Description

To implement and measure strategic programs that insure Carlson Restaurants Worldwide achieves, sustains, and continuously improves best in class programs for food quality and food safety.

Quality Assurance Responsibilities:
•Creates and writes product specifications, which include Critical to Quality Attributes.
•Implements / manages 3rd party audit program for suppliers and distributors.
•Investigates and resolves product issues.
•Initiates product withdrawals and product recalls with distribution, operations and suppliers.
•Determines trends and on-going issues with suppliers and assists suppliers in defining quality and process oriented continuous improvement projects.
•Conducts regular product evaluations with R&D and Strategic Sourcing Management.
•Provides technical support to R&D and Sourcing Operations throughout the life cycle of a product.
•Monitors industry issues and communicates to team concerns or trends that may affect the quality or supply of products or commodities.
•Insures supplier/distributor partners are utilizing HACCP, FDA and USDA guidelines.

Food Safety Responsibilities
•Monitors Federal and State regulatory food safety issues and communicates modifications and changes to the field.
•Maintains and updates CRW Food Safety Standards.
•Partners with operations to determine Food Safety Initiatives.
•Reviews all food preparation procedures and training materials for adherence to current industry food safety best practices, Food Codes recommendations and CRW Standards.
•Manages HACCP plans and ensures all new recipes and equipment meet HACCP requirements.

Position Requirements

Qualification Requirements
•B.S.  in Food Science or related
•Minimum 3 years related experience
•Comprehensive knowledge of food manufacturing, USDA / FDA regulations and FDA Food Code
•Recall procedures knowledge and experience


Knowledge, Skills and Abilities
•Comprehensive knowledge of food mfg, USDA/ FDA regulation, FDA Food Code , HACCP, Recall procedures, Business Communications
•Up to 20% travel required
