Developer
Department: Product Development
Reports to: Director Product Development
Position Summary:
The Product Developer will be responsible for the development and
reformulation of soups, broths, sauces, gravies, and other food
products for processing and packaging in aseptic and retortable recart
packages.
Key Responsibilities:
- Development of products
and formulas for soups, broths, sauces, and gravies packaged in
aseptic and recart formats
- Interface with the
Sales personnel to establish priorities and develop timetables
to meet the customers’ requests
- Work with and interact
with customers on development of new products as appropriate
from bench development through commercialization.
- Ensure artwork
ingredients, nutritionals and other package information are
correct and are in regulatory compliance
- Work with the
Purchasing Department and Sales to rationalize the number of
ingredients and formulas
- Work with ingredient
suppliers to ensure NAFTA compliance
- Commercialize bench top
samples to be run in the current plant processes
- Preparation of batch sheets
and preliminary costing of all formulas that are developed.
- Provide on-site support
for factory trials and initial production runs.
- Derivation of
parameters for nutritional labels and analytical targets and
ranges for QC line testing
- Complete analytical
testing of prototypes including pH, sodium, salt, density, brix,
viscosity and soup component analysis
- Interface with the
outside testing laboratories to ensure calibration and third
party analytics as required by customers
- Set-up and participate in
product sensory panels
- Documentation of all
prototype formulas and worksheets
Requirements:
- Minimum of 4 years as a
product developer of soups, broths, sauces, and/or gravies
- BS Food Science/Food
Technology, Food or Chemical Engineering preferred.
- Experience in aseptic
packaging and processing in a low acid, high speed environment
highly desireable, Combi
acceptable, Tetra preferred
- Working knowledge of
HACCP, GMPs, SOPs, CFIA, FDA,USDA, Kosher, Organic, Halal
requirements
- Working knowledge of
Canadian and US food safety regulations and labeling
requirements recommended.
- Familiarity with
Genesis software for nutritional calculations
- Culinary training and
experience preferred
- Knowledge of
microbiological techniques and procedures
- Strong work ethic, a
“can do” or “whatever it takes” attitude
- Flexibility to work in
a fast paced environment with multiple priorities
- Ability to work
independently, with multiple priorities and to make decisions
and follow through on commitments
- Ability to travel as required
within Canada and the United States
- Computer Skills- MS
